Rum Cake

- 1 package yellow cake mix
- 1 package instant vanilla pudding 3 oz
- 4 each eggs
- 1/2 cup salad oil
- 1/2 cup rum
- 1/2 cup water
- 1/2 cup chopped pecans
- Glaze frosting
- 1 stick butter
- 1 cup sugar
- 1 ounce rum
- 1/4 cup water
Sweet and Spicy Bacon Chicken

Season chicken with salt, pepper, garlic powder and chili powder
- chicken breast strips
- garlic powder
- chili powder
- bacon
- brown sugar
Cranberry Mustard Pork Loin (skinny)

Place roast in a 3 qt slow cooker
- 2 lb boneless whole pork loin roast
- 1 can whole berry cranberry sauce
- 1/4 c dijon mustard
- 3 T brown sugar
- 3 T lemon juice
- 1 T cornstarch
- 1/4 c cold water
Crock Pot Mexican Chicken

Put frozen chicken in the crock pot
- 2-3lb bag of frozen chicken breast tenderloins
- 8 oz block of cream cheese
- can of black beans, drained and rinsed
- can of corn, drained
- can of rotel
- rice for 6 people
- if desired you can spice it up with package of taco seasoning or a packet of dry ranch dressing mix or use hot rotel
Slow Cooker Lasagna

In a large skillet over med heat, cook the ground beef, onion, and garlic until brown
- 1 lb lean ground beef
- 1 chopped onion
- 2 t minced garlic
- 29 oz can tomato sauce
- 6 oz can tomato paste
- 1 1/2 t salt
- 1 t dried oregano
- 12 oz pkg lasagna noodles
- 12 oz cottage cheese
- 1/2 c grated Parmesan cheese
- 16 oz shredded mozzarella cheese
Low Fat Crock Pot Garlic Mashed Potatoes

Scrub potatoes and cut them into chunks
- 5 pounds red potatoes
- 3 teaspoons low-fat chicken bouillon granules
- 1 teapoon salt
- 6 cloves of garlic, minced
- 8-ounce package fat-free cream cheese
- 8 ounces (1/2 cup) Breakstone fat-free sour cream
- Ground black pepper, to taste.
3 Ingredient Crock Pot Chicken

Put all ingredients in a crock pot and cook on low 6-7 hours
- 3 chicken breasts
- 1 c Italian dressing
- 1 envelope onion soup mix (you might want half the package)
- Rice
Potato Gratin with Parmesan and Rosemary

Preheat oven to 400. Spray a 9 in round or square pan with PAM
- 3 T flour
- 2 1/4 c milk
- 2 large garlic cloves minced
- 1/2 t dried rosemary
- 1/4 t dried thyme
- 1/2 t salt
- 1/4 t black pepper
- 2 T cream cheese
- 1/2 c grated Parmesan cheese
- 2 1/2 lbs russet potatoes peeled and sliced into 1/4 in slices
Cheesy Spinace and Bacon Dip

Combine ingredients in microwaveable dish
- 10 oz frozen chopped spinach, thawed and drained
- 16 oz velveeta cheese, cut into 1/2 inch cubes
- 4 oz cream cheese, cut up
- 1 can Rotell Diced Tomatoes and chilies, undrained
- 8 slices bacon, crisply cooked, drained and crumbled
Bob's Mom's Chicken

Saute floured chicken parts in 1/2 c butter until browned
- glaze:
- 10 chicken breasts or parts
- 1/2 c butter or wesson oil
- 1 can chicken broth undiluted
- flour
- 10 oz jar of marmalade
- 1/3 c prepared mustard
- 1/4 c packed brown sugar
- 1/2 t salt
- 1/2 t pepper
