Cream Puff Dessert

IN a saucepan over medium het, bring water and butter to a boil
- 1 cup water
- 1/2 cup butter (not margarine)
- 1 cup flour
- 4 each eggs
- Filling
- 1 package 8oz cream cheese, softened
- 3 1/2 cups cold milk
- 2 packages 3.9oz each instant chocolate pudding
- Topping
- 1 carton 8oz Cool Whip, thawed
- 1/4 cup milk chocolate ice cream topping
- 1/4 cup caramel ice cream topping
- 1/3 cup chopped almonds
Best Ever Coconut Cake

Preheat oven to 350. Grease and flour a 9x13 baking dish
- 1 3/4 c flour
- 1 T baking powder
- 1/2 t salt
- 2/3 c shortening
- 2 c sugar
- 1 t vanilla
- 1/4 t coconut extract
- 1 c water
- 4 egg whites
- 1/2 t cream of tartar
- 5 oz can evaporated milk
- 1/2 c sweetened condensed milk
- Topping
- 2 c heavy cream
- 2 1/2 T sugar
- 1/4 t coconut extract
- 1 1/2 t vanilla
- 1 to 1/2 c sweetened flaked coconut
Super Simple Crock Pot Beef Stew Low Fat

Combine beef, tomatoes, celery, onion, and potatos
- 1 lb beef stew meat in chunks
- 1 can stewed tomatoes ( I use Italian Style)
- half an onion in wedges
- 3 stalks celery in chunks
- 1 potato in chunks ( peeled or not)
- 3 cups water
- salt pepper herbs etc. to taste
- 1/4 cup flour
- 1/2 cup water
Raspberry Walnut Thanksgiving Salad

IN a medium bowl, combine gelatin and boiling water; stir until gelatin is dissolved
- 1 package raspberry jello 3 oz
- 1 cup boiling water
- 1 cup cold water
- 1 package cream cheese 8 oz, softened
- 1 package frozen raspberries 10 oz, thawed and drained
- 1/2 cup chopped walnuts
- lettuce leaves
Country Pear Cobbler

COMBINE all filling ingredients, except pears, in large skillet
- Filling
- 3/4 cup firmly packed brown sugar
- 3 tablespoons flour
- 1/8 teaspoon salt
- 1/8 teaspoon nutmeg
- dash nutmeg
- 2 tablespoons lemon juice
- 6 medium pears, peeled, cored, slice
- Topping
- 1 cup flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup buttermilk
- 3 tablespoons butter, melted
- 1 tablespoon sugar, if desired
- light cream if desired
Pizza Dough

In a large mix bowl of a stand mixer stir yeast and honey into warm water
- 1 c warm water
- 2 1/4 t active dry yeast
- 1 T honey or sugar
- 2 t salt
- 2 T olive or canola oil
- 3 c flour
White Chocolate Fudge

Peanut Butter Squares

Cream 1/2 c peanut butter, butter and both sugars together
- 1/2 c peanut butter
- 1/2 c butter
- 1/2 c granulated sugar
- 1/2 c brown sugar
- 1 egg
- 1/2 t vanilla
- 1 c flour
- 1/4 t baking soda
- 1/4 t salt
- 1 cup uncooked oats or instant
- 1 1/2 c chocolate chips (9oz)
- 2/3 c powdered sugar sifted
- 1/4 c butter
- 3-4 T milk
Saffron Risotto

Heat a large sauce pan with oil on medium heat
- Risotto:
- Saffron Stock: Combine 1 gallon of chicken stocke with 2 pinches of saffron. Bring to a boil and reduce to a simmer for 25 minutes. Keep hot.
- 4 cups Arborio Rice
- 1 med yellow onion, diced
- 3 cloves of garlic, minced
- 2 cups canned Pear tomatoes
- 2 lbs chicken thigh meat, diced
- 2 lbs chorizo, diced
- 2 cups Ruby Hill white wine
- 2 cups green peas

Butter Bean Soup

In a large soup pot saute onion, carrots, celery salt and pepper until tender
- 32 oz bag frozen butter beans
- 1 c sliced carrots
- 1 large onion, chopped
- 1 stalk celery sliced
- 5 c chicken stock
- 1 c warm milk
- salt and pepper to taste
- 1 lb smoked ham, diced
