pork and broccoli stir fry

great stir fry--easy to adapt to most ingredients
- 1 lb boneless pork
- 1 c chicken broth
- 1 T cornstarch
- 2 T soy sauce
- 1/8 t crushed red pepper
- non-stick spray
- 1 medium onion-sliced
- 10 oz package broccoli-thawed
- 1 clove garlic-minced
- 1/2 t grated ginger root
- 1-2 t cooking oil
- 1/2 c sliced water chestnuts
- **variations: substitute any vegetable that you like (zucchini, bean sprouts, peppers, pea pods), chicken is also good instead of pork
QUICK CINNAMON CRUMB CAKE

PREHEAT OVEN TO 350 FOR THE TOPPING, MIX FLOUR, SUGARS AND CINNAMON IN A MEDIUM BOWL
- CAKE:
- CINNAMON CRUMB TOPPING
- 2 C FLOUR
- 1/2 C BROWN SUGAR
- 1/2 C SUGAR
- 2 T GROUND CINNAMON
- 1 C BUTTER, MELTED
- 1 PKG WHITE CAKE MIX
- 1 EGG
- 1 C SOUR CREAM
- 1/4 C BUTTER, MELTED
- 1 t VANILLA EXTRACT

- 1 1/2 c plus 1/3 c graham cracker crumbs

- 3/4 C PACKED BROWN SUGAR

- 1 C SEMISWEET CHOCOLATE CHIPS

COCONUT OATMEAL COOKIES

- 1 c flour
- 1/2 t baking powder
- 1/2 t salt
- 1/2 t baking soda
- 1/2 c butter-softened
- 1 c coconut
- 1/2 c sugar
- 1/2 c brown sugar

- 1/2 c quick oats

- 4 c finely chopped walnuts (I use a blender/food processor)
- 1/4 c sugar
- 1 T ground cinnamon

- 1 package (16 oz) phyllo dough-thawed

- 1/4 c honey
- 1 t lemon juice
