Tomato-&-Olive-Stuffed Portobello Caps

Portobello caps make excellent mini casseroles
- 2/3 cup chopped plum tomatoes
- 1/2 cup shredded part-skim mozzarella cheese
- 1/4 cup chopped Kalamata olives
- 1 tsp. minced garlic
- 2 tsp. extra-virgin olive oil, divided
- 1/2 tsp. finely chopped fresh rosemary, or 1/8 tsp. dried
- 1/8 tsp. freshly ground pepper
- 4 portobello mushroom caps, 5 inches wide
- 2 Tbsp. lemon juice
- 2 tsp. reduced-sodium soy sauce
No-Bake Truffle Treats

Thanksgiving Giblet Stock-Martha Stewart

Trim any fat or membrane from giblets
- Giblets (heart, gizzard, and liver) and neck, reserved from turkey
- 4 Tbsp. unsalted butter
- 1 onion, peeled and cut into 1/4" cubes
- 1 rib celery with leaves, stalk cut into 1/4" cubes, leaves roughly chopped
- 1 sm leek, trimmed, washed and cut into 1/4" cubes
- Coarse salt and freshly ground pepper
- 1 dried bay leaf
Chicken Picatta*

1. Pound chicken breasts to 1/4 " thickness
- 4 boneless skinless chicken breasts
- 1/4 cup + 1 1/2 Tbsp. flour, divided
- 1/2 tsp. + 1 1/2 tsp. chicken flavored bouillon granules, divided
- 1 Tbsp. olive oil
- 1 Tbsp. butter
- 1/2 cup white cooking wine
- 1/4 cup lemon juice
- 2 Tbsp. capers, drained and rinsed
- 2 Tbsp. chopped fresh parsley
- 1 lb pasta (optional)
Lime Daiquiri with Apricot Brandy*

Mix first 5 ingredients in small pitcher until sugar dissolves
- 3/4 cup light rum
- 1/2 cup fresh lime juice
- 1/4 cup sugar
- 8 tsp. apricot brandy
- 8 tsp. triple sec
- ice cubes
- 1 lime, sliced into rounds
Salmon Teriyaki

In the Japanese kitchen, "teriyaki" means a dish that's glazed and grilled or broiled
- 3/4 cup soy sauce
- 3/4 cup mirin
- 6 tbsp. sake
- 1/4 cup sugar
- 6 4-oz. skin-on salmon filets
- 1 scallion, green part only, cut into 2" lengths and thinly sliced lengthwise
- 2 tsp. toasted sesame seeds
Thanksgiving Turkey Brine*

1. Bring 1 quart water, the salt, bay leaves, and spices to a simmer, stirring util salt has dissolved
- 18-20 lb turkey, patted dry
- 7 qts. water
- 1 1/2 cup coarse salt
- 6 bay leaves
- 2 Tbsp. whole corriander seeds
- 1 Tbsp. dried juniper berries
- 2 Tbsp. whole black peppercorns
- 1 Tbsp. fennel seeds
- 1 tsp.black or brown mustard seeds
- 1 bottle dry Riesling
- 2 med onions, thinly sliced
- 6 garlic cloves, crushed
- 1 bunch fresh thyme
Pumpkin-Spice Bundt Cake

Combine first 6 ingredients; set flour mixture aside
- 3 1/4 cups all-purpose flour
- 1 tablespoon baking powder
- 2 1/2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 1 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 1/2 cups fresh or canned pumpkin puree
- 1/2 cup applesauce
- 1 1/2 cups granulated sugar
- 1/2 cup stick margarine, softened
- 3 large egg whites
- 2 teaspoons vanilla extract

- 3 tablespoons dark or light brown sugar
- 1 tablespoon dark rum
