Sherry Roasted Root Vegetables

Preheat oven to 425°. Combine all ingredients except cooking spray in a large bowl, tossing well to coat
- 2 cups (1/4" thick) sliced parsnips
- 2 cups baby carrots (about 1/2 lb.)
- 1 cup thinly sliced fennel bulb (about 1 small bulb)
- 1/4 cup dry sherry
- 2 Tbs. olive oil
- 1 1/2 tsp. salt
- 1 tsp. dried thyme
- 7 shallots, peeled (about 1/2 lb.)
- 4 red potatoes, cut into 1/2 inch thick wedges, (about 1 lb.)
- 2 turnips, peeled, quartered, and thinly sliced (about 1 lb.)

Thai Peanut Sauce

Combine ginger root, chilies, garlic and green onions in a mixing bowl
- 1/2 " piece fresh ginger root, peeled and minced
- 1 to 2 serrano or other hot chilies, seeded and minced
- 1 clove garlic, minced
- 2 green onions, minced
- 1/3 cup creamy peanut butter
- 1/3 cup unsweetened coconut milk
- 2-3 Tbsp fresh lime or lemon juice
- 2 Tbsp fish sauce or soy sauce
- 1 tsp sugar
- 1/4 cup fresh cilantro
Bourbon Balls*

1. Combine vanilla wafer crumbs, powdered sugar, cocoa, nuts, corn syrup and bourbon
- 3 cups finely crushed vanilla wafer cookies
- 1 cup powdered sugar
- 1 1/2 tbs. cocoa
- 1 1/2 cups finely chopped pecan halves
- 3 tbs. light corn syrup
- 1/2 cup bourbon

Carrot Cake

Preheat oven to 325°. Grease a 9x9 inch or 10x10 inch baking pan
- CAKE
- 1 cup coconut flour
- sweetener such as Truvia equal to 1 cup sucrose
- 2 Tbs. grated orange zest
- 1 Tbs. ground flaxseeds
- 2 tsp. ground cinnamon
- 1 tsp. ground allspice
- 1 tsp. grated nutmeg
- 1 tsp. baking powder
- dash fine sea salt
- 4 large eggs
- 1/2 cup coconut oil, melted or melted butter
- 1 cup sour cream
- 1/2 cup coconut milk
- 2 tsp. pure vanilla extract
- 2 cups finely grated carrots
- 1 cup chopped pecans
- ICING
- 8 oz. Neufchatel at room temperature
- 1 tsp. fresh lemon juice
- 1 Tbs. Truvia, ro 1/8 tsp. stevia extract powder, or 1/4 cup granulated Splenda
Italian Sausage Soup

In a 5-6 qt pan, combine onions, garlic and 1 cup broth
- 2 lg onions, chopped
- 2 cloves garlic, minced
- 5 cup beef broth
- 1 lb italian sausage
- 1 1/2 cup dry red wine
- 28 oz. italian-style tomatoes, broken up
- 1 Tbsp. basil
- 1 Tbsp. sugar
- 1 med green pepper, chopped
- 2 med zucchini, sliced 1/4" thick
- 2 cup dry bow tie pasta
- 1/2 cup parsley, chopped
- salt and pepper
Creamy Crab and Red Pepper Spread*

REMOVE 2 Tbsp. of the onions; set aside
- 2 green onions, thinly sliced, divided
- 1 tub (8 oz) PHILADELPHIA 1/3 Less Fat Cream Cheese
- 1 can (6 oz) lump crabmeat, drained
- 1/2 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese
- 1/2 cup finely chopped red peppers
- 1 Tbsp. GREY POUPON Dijon Mustard
- RITZ Reduced Fat Crackers

Marilyn's Marinated Mushrooms

Heat all except mushrooms to a boil
- 2 lb fresh mushrooms
- 2/3 cup red wine vinegar
- 1/2 cup oil
- 2 tsp. salt
- 2 lg garlic cloves, sliced
- 1/2 cup parsley
- 1 Tbsp. Dijon mustard
- 2 Tbsp. brown sugar
Spinach Casserole

preheat to 350fi Cook spinach and drain well
- 2 pkgs. frozen chopped spinach
- 1 can cream of mushroom soup
- 1 4 oz. cream cheese
- 1 4 oz. can sliced mushrooms
- 1 10 3/4 oz. can French fried onions
Overnight Brussells Sprouts

- Brussells sprouts sliced in half
- juice of one lemon
- 1 Tbs. olive oil
- pepper
- paprika
