Cobb Salad

Chop lettuce, watercress, endive and romaine in very fine pieces
- 1/2 head iceberg lettuce
- 1/2 bunch watercress
- 1 sm bunch curly endive
- 1/2 head romaine
- 2 Tbsp minced chives
- 2 med tomatoes, peeled, seeded & diced
- 1 chicken breast, cooked, boned, skinned & diced
- 6 slices bacon, cooked, diced
- 1 avocado, diced
- 3 hard-cooked eggs, diced
- 1/2 cup roquefort cheese, crumbled
- Special french dressing ---
- 1/4 cup water
- 1/4 cup red wine vinegar
- 1/4 tsp sugar
- 1 1/2 tsp lemon juice
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp worcestershire sauce
- 3/4 tsp dry mustard
- 1/2 garlic clove; minced
- 1/4 cup olive oil
- 3/4 cup vegetable oil
Chicken Casserole

Mix all together. Cover and bake 400° oven for 25-30 minutes
- 2 lbs cubed cooked chicken
- 1/2 cup celery
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup slivered almonds
- 1 cup shredded cheddar cheese
- 1 can cream of chicken soup
- 6 oz french fried onions
Honey-Mustard Salmon with Green Beans

Preheat oven to 450°. Whisk together honey, mustard, vinegar, and oil; season with salt and pepper
- 2 tsp. honey
- 4 tsp. Dijon mustard
- 3 Tbsp. Champagne or white-wine vinegar
- 1/2 cup olive oil
- Salt and pepper
- 1 med yellow onion, thinly sliced lengthwise
- 1 cup fresh breadcrumbs
- 1 lb boneless, skinless salmon fillet, cut into 4 pieces
- 1 lb green beans, trimmed
Fried Noodle Casserole

Preheat oven to 325° In a large skillet, melt butter
- 1/4 cup butter
- 1/2 lb. uncooked fine egg noodles
- 1 cup chicken broth
- 1/2 cup water
- 1 10 1/2-oz. can French onion soup
- 1 1/2 tsp. soy sauce
- 1 8-oz, can diced water chestnuts, drained
- 1 6 1/2-oz. can sliced mushrooms, drained
Marinated Cucumbers & Onions

Mix all together and marinate
- sliced cucumbers and onions
- 1/2 cup apple cider vinegar
- 1 tsp cracked pepper
- 2 Tbs sugar
- 2 tsp salt (too much?)
- 1 cup water
- 1/4 cup olive oil
4 Basic Vinaigrettes

Mix vinegar, sat and pepper in a small bowl, let stand a few minutes
- Basic Vinaigrette
- 2 Tbs. red or white wine vinegar
- 1/2 tsp. salt
- 1/4 tsp. freshly ground pepper
- 1/2 cup olive oil
- Mustard French Dressing: add
- 1 to 1 1/2 Tbs. Dijon mustard
- French Dressing: add
- 2 tsp. fresh chopped herbs, such as basil, chervil or tarragon
- Chiffonade Dressing: add
- 1 Tbs. minced parsely
- 2 Tbs. minced sweet red pepper
- 1 Tbs. minced onion
- 2 hard cooked eggs, finely chopped

- 1 cup Round Table Unbleached Pastry flour or 7/8 cup King Arthur Unbleached All-Purpose Flour
- 1/2 cup sugar
- 1 tsp. baking powder
- 1/8 tsp. nutmeg
- 1/4 tsp. salt
- 1 tsp. cinnamon
- 3 Tbsp. dried buttermilk powder
- 2 lg eggs
- 3 Tbsp. vegetable oil
- 2 Tbsp. water

- Using pastry flour will make a more tender doughnut.
- If you don't have buttermilk powder on hand, substitute 2 Tbsp. buttermilk or yogurt for the water
