Eric's Fish Or Chicken Topping

In food processor add all ingredients
- 1/4 cup olive oil
- 1/4 cup chopped onion
- oregano
- garlic, minced
Whipped Potatoes with Herbs

Cook potatoes and garlic in large saucepan of boiling salted water until tender, about 25 minutes
- 1-1/2 lbs. russet potatoes, peeled and quartered
- 5 garlic cloves
- 1 stick butter, room temperature
- 1/2 cup chopped mixed fresh herbs-such as basil, parsley and chives
Corned Beef & Swiss Appetizers*

Mix cream cheese and mustard together
- 8-oz. cream cheese softened
- 2 tsp. Dijon mustard
- 1/4 lb chipped corned beef
- 1/2 cup shredded Swiss cheese
- 2 Tbsp. green onion
- cocktail rye bread
Baked Prehistoric Chicken

Mix all together and bake in a 400° oven for 30 to 45 minutes
- 1 pkg chicken thighs, cut into bite size pieces

- 2 large onions, sliced crosswise into 1/3" slices
Rhubarb Dump Cake

More like a crisp than a cake, but it doesn't get much easier or yummier than this!
- 1 lb rhubarb, cut into 1/4 inch pieces (between 3 and 4 cups)
- 1 cup white sugar
- 1 (3 oz. package) strawberry jell-o
- 1 pkg yellow cake mix
- 1 cup water
- 1/4 cup butter, melted
Creamy Blue Cheese Dressing

Whisk mayonnaise, buttermilk (or milk), yogurt, vinegar, mustard, salt and pepper in a medium bowl until smooth
- 1/3 cup reduced-fat mayonnaise
- 1/3 cup nonfat buttermilk, or nonfat milk
- 1/3 cup nonfat plain yogurt
- 2 tablespoons tarragon vinegar, or white vinegar
- 1 tablespoon Dijon mustard, mustard
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 1/4 cup crumbled blue cheese, (1 ounce)
Thai-Ginger Salmon Rub

Place salmon on oil sprayed baking dish
- 1 to 1 1/2 lb. salmon about 1" thick
- 1 tsp. fresh lime juice
- 1 tsp. ground ginger
- 1/2 tsp. dried basil
- 1/4 tsp. paprika
- 1/4 tsp. ground cumin
- 1/4 tsp. ground coriander
- 1/4 tsp. ground tumeric
- 1/2 tsp. kosher salt
- 1/4 tsp. ground cayenne pepper
Wine Roast of Beef

Preheat oven to 325° Brown meat on all sides
- 3 lb. pot roast
- 1/2 cup sherry
- 2 large onions, sliced
- 1 cup beef consomme
- 2 bay leaves
- 1/2 cup brown sugar
- 1/3 cup vinegar
- 3 Tbs. ketchup
- 1/2 cup raisins
Creamed Hash Browns

Mix all ingredients and bake in 9x13" pyrex dish
- 2 lbs. hash browns, thawed
- 1/4 cup butter, melted
- 1/2 cup chopped onions
- 1 can cream of chicken soup
- 2 cups sour cream
- 1 cup shredded cheddar
- salt and pepper to taste
Cheesy Potato Bake

Thinly slice the potatoes, and place in a greased, shallow 2 qt
- 4 large, unpeeled baking potatoes
- 1/4 cup butter or margarine
- 1 Tbs. grated onion
- 1 tsp. salt
- 1/2 tsp. dried thyme
- 1/8 tsp. pepper
- 1 cup (4-oz.) shredded cheddar cheese
- 1 Tbs. chopped fresh parsley
