Potato & Ham Scallop

Place half the ham in a 2 qt casserole
- 2 cup cooked ham
- 8 med potatoes, peeled and thinly sliced
- 1/4 cup onion, chopped
- 1/2 cup all-purpose flour
- 2 cup milk
- 3 Tbsp dry bread crumbs
- 1 Tbsp butter or margarine
- 2 Tbsp parsley finely snipped
Turkey Sloppy Joes

In a large saucepan, heat oil over medium; add carrots, onion, and garlic
- 1 Tbsp. olive oil
- 4 carrots, coarsely grated (2 cups)
- 1 med onion, minced
- 1 garlic clove, minced
- Coarse salt and ground pepper
- 3 Tbsp. tomato paste
- 3/4 lb ground turkey (93% lean, dark meat)
- 1 can (28 oz) crushed tomatoes
- 2 Tbsp. dark-brown sugar
- 1 Tbsp. cider vinegar
- 1 tsp. Worcestershire sauce
- 4 whole-wheat hamburger rolls, spl
Spicey Roasted Cauliflower

Preheat oven to 400° Cut cauliflowrer into small florets
- 1/3 cup olive oil
- 1 tsp. kosher salt
- 1/2 tsp. crushed red pepper
- 6 cups cauliflower florets (about 1 medium head)
Grilled Shrimp in Apricot Hoisin Sesame Glaze

Heat oil in heavy saucepan over medium high heat and sauté garlic, sesame seeds and ginger for 2 minutes
- For Glaze ----
- 1 Tbsp. olive oil
- 2 Tbsp. fresh minced garlic
- 1/4 cup sesame seeds
- 1 Tbsp. fresh minced ginger root
- 1 cup apricot preserves
- 8 oz. hoisin sauce
- For shrimp ----
- 2 lb lg cleaned fresh shrimp
- 2 Tbsp. fresh minced garlic
- 1/8 cup soy sauce
- 2 Tbsp. extra virgin olive oil
Artichoke Dip

Mix all together, and microwave for 10 minutes
- 1 can artichoke hearts, chopped and drained
- 8 oz. cream cheese
- 8 oz. mozzarella
- 1/2 cup mayonnaise
- 1/4 cup parmesan cheese
- 4-5 garlic cloves, pressed

In saucepan combine water, butter, salt and hot sauce
- 2 Tbs. butter
- 1/4 tsp. salt
- 1/8 tsp. hot sauce
- 1 cup instant couscous
- 1 1/2 cups water
- 1/4 cup parmesan

- 1/3 cup oil
- 1 pkg. beef flavored ramen noodles
- 1/2 tsp. garlic salt
- 1 16-oz. pkg. shredded cole slaw mix
- 1 5-oz. pkg. sliced almonds
