White Chocolate Drops

Melt chocolate in a double boiler
- 3 or 4 squares white chocolate
- 1 cup salted Dry Roasted Planters Peanuts
- 2 cups Honeycomb cereal, slightly crushed
Spicy Bean Salsa

Mix everything together and refrigerate overnight to blend the flavors
- 1 15-oz. can black eye peas
- 1 16-oz. can black beans, rinsed and drained
- 1 15 oz. can corn, drained
- 1/2 cup chopped onions
- 1/2 cup chopped green pepper
- 1 4-oz. can diced jalapeno peppers
- 1 14-oz. can diced tomatoes, drained
- 1 cup fat free Italian salad dressing
- 1/2 tsp. salt
Soft Garlic Breadsticks*

- 1 can (11 oz) refrigerated soft breadsticks
- 1/2 cup Philadelphia roasted garlic light cream cheese spread
Creamy Avocado Dip

In a food processor, combine avocados, sour cream, cilantro, lime juice, jalapeno, and salt
- 2 sliced avocados
- 1 cup low-fat sour cream
- 1/2 cup packed fresh cilantro leaves
- 1 tablespoon lime juice
- 1 finely chopped jalapeno
- 1/2 teaspoon coarse salt
- Tortilla chips, for serving2 sliced avocados
Roasted Potato Salad with Mustard Dressing*

Preheat oven to 400°. Combine first 4 ingredients in a lg bowl; toss to coat
- 3 pounds small red potatoes, cut into 1-inch pieces
- 1 tablespoon olive oil
- 2 teaspoons freshly ground black pepper
- 1/2 teaspoon kosher salt
- 2 bacon slices (uncooked), chopped
- 2 cups diced vidalia or other sweet onion (about 2 medium
- 2 garlic cloves, minced
- 3 tablespoons dijon mustard
- 2 tablespoons reduced-fat mayonnaise
- 1 1/2 tablespoons honey
- 1 1/2 tablespoons sherry vinegar
- 1/4 cup chopped fresh parsley
Raspberry Vodka*

1. Place the raspberries in a jar or bottle with a lid, and add vodka
- 1 pint fresh raspberries

Giger/Hoisin Salmon

Chicken Picatta

1. Pound chicken breasts to 1/4 " thickness
- 4 boneless skinless chicken breasts
- 1/4 cup + 1 1/2 Tbsp. flour, divided
- 1/2 tsp. + 1 1/2 tsp. chicken flavored bouillon granules, divided
- 1 Tbsp. olive oil
- 1 Tbsp. butter
- 1/2 cup white cooking wine
- 1/4 cup lemon juice
- 2 Tbsp. capers, drained and rinsed
- 2 Tbsp. chopped fresh parsley
- 1 lb pasta (optional)
Apple Bundt Cake*

Oil and flower a 12 cup Bundt pan
- 4 medium Golden Delicious apples (about 1 1/2 lbs.) peeled, cut into 1/3 inch pieces
- 5 Tbs. plus 2 1/2 cups sugar
- 2 tsp. ground cinnamon
- 4 large eggs
- 1 cup vegetable oil
- 1/4 cup orange juice
- 1 Tbs. grated orange peel
- 1 tsp. vanilla extract
- 3 cups all purpose flour
- 3-1/2 tsp. baking powder
- 1/2 tsp. salt

Cream of Turkey & Wild Rice Soup*
