In a bowl, combine the uncooked beef, beans, chili powder and oregano
- 1 lb. very lean ground beef
- 1 16-oz. can refried beans
- 1 1/2 tsp. chili powder
- 1 1/2 tsp. dried oregano
- 1 8-oz. pkg. manicotti shells
- 2 1/2 cups water
- 1 16-oz. jar picante sauce
- 2 cups sour cream (16-oz.)
- 1 cup shredded Monterey Jack or Mexican blend cheese
- 1/4 cup sliced green onions

Thyme Roasted Carrots

- 2 8-oz. pkgs. cream cheese, at room temp
- 1/3 cup sour cream
- 1/4 cup mayonnaise
- 1 Tbsp. fresh lemon juice
- 1 Tbsp. Dijon mustard
- 1 garlic clove, minced
- 1 tsp. Worcestershire sauce
- 1/2 tsp. hot pepper sauce
- 3 6-oz. jars marinated artichoke hearts, drained and coarsely chopped
- 1 cup grated mozzarella cheese
- 3 green onions, finely chopped
- 2 tsp. minced seeded jalapeno chiles
- 6 6" pita rounds, each cut into 6 triangles

- 1 large sweet onion (such as Walla Walla, Vidalia, or Maui)
- 3 red tomatoes, sliced
