Maple Mustard Oven Roasted Salmon

Preheat oven to 400°. Combine mustard and syrup in bowl
- 3 Tbs whole grain mustard
- 1 Tbs maple syrup
- 4-4 oz salmon filets, skin on
- kosher salt and ground pepper
- 1/4 cup panko

- Add ----
- 3 1/2 cups cold cooked chicken breast, cut into 1/2" chunks
- 2/3 cup celery, thinly sliced
- 2 green onions, thinly sliced
- 1 sm apple, diced

- 3 eggs
- 1 cup oil
- 2 cup sugar
- 2 tsp vanilla
- 2 cups shredded, unpeeled zucchini
