Salmon with Herb-Almond Crust

Rinse fish; pat dry. Measure thickness of fish; set aside
- 2 6-oz. wild salmon fillets, skinned
- 3 Tbsp. chopped almonds
- 2 Tbsp. butter, softened
- 2 Tbsp. fine dry bread crumbs
- 1 Tbsp. grated Parmesan cheese
- 2 tsp. snipped fresh basil and/or Italian (flat-leaf) parsley
- 1/2 tsp. finely shredded lemon peel
- 1 clove garlic, minced (or 1/2 tsp. bottled minced garlic)
- 1/8 tsp. freshly ground black pepper

Combine salt and lime zest on a small plate
- 1 Tbsp. kosher salt
- 1 Tbsp. lime zest
- 1 cup cold white tequila
- 1 cup cold pineapple juice
- 1/2 cup lime juice, plus 1 lime wedge
- 1/4 cup orange juice
- Ice cubes
- Pineapple slices for garnish
- Lime slices for garnish
Tart Berry Coulis

- 2 cup fresh or frozen berries of choice, more for garnish
- 2 Tbsp. sugar or to taste
- 1/2 tsp. lemon zest

- 3 med carrots, sliced
- 3 med stalks celery, sliced
- 1 lg onion, chopped
- 1 Tbsp. minced garlic
- 2 lb boneless, skinless chicken breast, trimmed and cut into 1" cubes
- 1/3 cup cornstarch
- 4 cup low-fat milk
- 1/8 tsp. salt
- 5 Tbsp. hot sauce, preferably Frank’s RedHot
- 3/4 cup crumbled blue cheese (ab 4 ounces)
- 6 oz. pasta
- canola oil as needed
- 3 med carrots, sliced
- 3 med stalks celery, sliced
- 1 med onion, chopped
- 1 lb chicken tenders, 3/4 inch cube
