Fry bacon in medium-size fry pan until crisp
- 5 bacon slices
- 1 tsp sugar
- 2 Tbsp vinegar
- 1/4 cup wine, red or white
- 1/2 head red cabbage, shredded
- 2 Tbsp vegetable oil
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 Tbsp caraway seeds
White Chocolate Cappuccino Mousse

- 3/4 cup whipping cream, scalded
- 6 oz (1 cup) white chocolate chips
- 1 lg egg, room temp
- 2 tsp instant espresso coffee powder, dissolved in 1 Tbsp boiling water
- 1/2 tsp ground cinnamon
- 1/2 tsp orange extract
- 1 tsp pure vanilla extract
- 1/3 cup whipping cream
- Optional garnish: whipped cream, cinnamon and chocolate coffee beans
Mexican-Style Lasagna

Preheat oven to 425° (375° if using disposable nonstick bakeware; increase baking time to 35 - 40 minutes)
- 1 cup fresh cilantro leaves
- 4 scallions coarsely, chopped
- Coarse salt and ground pepper
- 10 oz. fresh baby spinach
- Nonstick cooking spray
- 8 (6-inch) corn tortillas
- 1 can (15.5 oz) pinto beans, drained and rinsed
- 1 cup prepared salsa (mild or medium)
- 8 oz. pepper Jack cheese, grated (ab 2 cups)
Orzo Salad with Cranberries & Pecans*

In a small pan, bring water to a boil
- 1/2 box Orzo
- 3/4 cup Equal Exchange Dried
- Sweetened Cranberries
- 2 med carrots, chopped
- 1 sm cucumber, seeded and chopped
- 1 Tbsp. olive oil
- 3 Tbsp. balsamic vinegar
- 1 tsp. Dijon mustard
- 1 tsp. Honey
- Salt & Pepper to taste
- 2-3 sliced scallions
- 1/4 cup Equal Exchange Organic
- Roasted Salted Pecans, chopped
Pat's Banana Cake

1. Sift cake flour and baking soda together
- 3 cups shifted cake flour
- 2 tsp. baking soda
- 1 cup shortening
- 2 cups sugar
- 3/4 cup milk
- 2 eggs, slightly beaten
- 1 1/2 cup mashed ripe bananas (about 3 1/2)
- 1/2 cup chopped pecans (2 oz.)
Stuffed Shell Macaroni

- 1/2 cup chopped red onion
- 1 clove garlic, minced
- 2 Tbs. olive oil
- 1 15-oz. can tomato sauce
- 1 15-oz. can black beans, rinsed
- 1 15-oz. can white beans, rinsed
- 1 15-oz. can diced tomatoes
- 1 cup frozen edamame
- 1 4 1/2-oz can diced green chili peppers
- 1/2 cup water
- 1 Tbs. balsamic vinegar
- 1 can or less sliced black olives
- 2 Tbs. fresh cilantro
- cooked rice, pasta or couscous
- shredded mozzarella cheese
Homemade Breakfast Sausage

- 1/2 Tbsp coarse salt
- 1/2 tsp sage
- 1/3 tsp savory
- 1/8 tsp ground nutmeg
