Home-Style Meat Loaf

Preheat oven to 350° Combine 1/2 cup ketchup, oats, and next 6 (oats through egg whites) in a large bowl
- 3/4 cup ketchup, divided
- 1/2 cup quick-cooking oats
- 1/4 cup minced fresh onion
- 2 Tbsp. chopped fresh parsley
- 1 Tbsp. brown sugar
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 2 lg egg whites, lightly beaten
- 1 1/2 lb ground round
- Cooking spray
Spice Rubbed Pork Tenderloin

Preheat oven to 425° Brush roast with oil and press rub on roast
- Rub:
- 2 Tbsp. packed brown sugar
- 1 tsp. pumpkin pie spice
- 1/2 tsp. each garlic powder & paprika
- 1/4 tsp. each salt and ground pepper
- 1 lb pork tenderloin
- olive oil
Jamaican Jerk Rub

Mix all together. Store in jar for 6 months
- 1 Tbs. onion powder
- 1 Tbs. packed brown sugar
- 1 Tbs. dried thyme, crushed
- 1 1/2 tsp.salt
- 1 1/2 tsp. cracked black pepper
- 1/2 tsp. ground nutmeg
- 1/2 tsp. ground cloves
- 1/4 tsp. cayenne pepper
Crunch Chocolate

Melt chocolate in the top of a double boiler
- 1 1/2 lbs. chocolate
- 1 cup rice crispies
- 1/2 cup chopped nuts
- butter for pan
Marinated Heirloom Tomatoes with Tarragon*

Combine first 4 ingredients in a bowl, stirring well
- 1/4 cup finely chopped shallots
- 1 tablespoon chopped fresh tarragon
- 2 tablespoons balsamic vinegar
- 4 teaspoons extravirgin olive oil
- 2 pounds (about 6 medium) heirloom tomatoes, cut into 1/4-inch-thick slices
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper

Sauté celery in olive oil
- shrimp
- Louisianna Hot Sauce
- fresh garlic
- olive oil
- chopped celery
- crusty French or Italian bread
Green Beans with Walnuts and Shallot Crisps

Shallot crisps are the star attraction here and can be made in advance
- 5 large shallots (1/2 lb.), peeled and sliced into thin rings
- 1/2 cup vegetable oil
- Green Beans
- 2 lb. green beans, trimmed
- 3 Tbs. apple cider vinegar
- 3 Tbs. Dijon mustard
- 3 Tbs. vegetable oil
- 3 Tbs. maple syrup
- 1 cup toasted chopped walnuts (1/2 lb.)
Oven Baked Mini Omelets

Saute ham and onion and set aside
- handfull of shreded ham or other meat
- chopped onion
- 8 eggs
- 1/4 cup milk
- 1/2 tsp oil
- 1/2 tsp baking powder
- salt & pepper
- shredded cheese
Meatloaf Muffins

These nifty meatloaf muffins not only taste great, they do the portion control for you
- 1 Tbsp. canola or olive oil
- 2 carrots, cut in 1/4" dice
- 2 celery stalks, halved lengthwise and cut across in 1/4" slices
- 1/2 cup chopped onion
- 1/4 tsp. each dried thyme, basil and oregano
- 2 lg eggs
- 3/4 cup ketchup, divided
- 2 tsp. Dijon mustard
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- 1 1/4 lb lean ground turkey
- 3/4 cup whole wheat panko bread crumbs
Steak Diane

- 1 lb. tenderloin tips
- 2 cups sliced mushrooms
- 4 shallots (cloves) finely chopped
- 2 Tbs. worcestershire
- 1 Tbs. Dijon mustard
- 1 Tbs. fresh chives
- 1/4 cup brandy
- salt
- pepper
- butter
