Baked Creamy Macaroni and Cheese

Heat oven to 375° and position an oven rack in upper third of oven
- 2 Tbsp. butter
- 1 cup cottage cheese (not lowfat)
- 2 cup milk (not skim)
- 1 tsp. dry mustard
- Pinch cayenne
- Pinch freshly grated nutmeg
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1 lb sharp or extra-sharp cheddar cheese, grated
- 1/2 lb elbow pasta, uncooked.
Roasted Red Pepper Dip Recipe

Lightly drain the roasted red peppers and put everything into a food processor
- 1 jar roasted red peppers (12 ounce)
- 1 sm shallot
- 1 Tbsp. extra-virgin olive oil
- 2 tsp. ground cumin
- 1 pkg cream cheese (8 ounce), softened
- 6 Tbsp. sour cream
Lee's Taco Chili Soup

Brown beef or turkey and drain well
- 1 1/2 pounds ground round OR 2 turkey chubs
- 1 chopped onion
- 1 15 oz. can kidney beans, undrained
- 1 15 oz. can pinto beans, undrained
- 1 10 oz. can Rotel Tomatoes, undrained
- 1 package Taco Seasoning
- 1 package Hidden Valley Ranch Dressing Mix
Rosemary Roasted Nuts*

Preheat oven to 350 degrees
- 2 cup mixed nuts, such as cashews, walnuts, and pecans
- 4 Tbsp. (1/2 stick) butter
- 1/3 cup packed light-brown sugar
- 1 tsp. chopped fresh rosemary
- Coarse salt
Honey Garlic Green Beans

Whisk together first 5 ; set aside
- 4 Tbs honey
- 2 Tbs soy sauce
- 4 garlic cloves, minced
- 1/4 tsp salt
- 1/4 tsp crushed red pepper flakes
- 2 lbs green beans, left whole, trimmed
Triple Mustard Salmon

In a shallow dish, combine the wheat germ and mustard seeds
- 3 Tbs. toasted wheat germ
- 1 Tbs. yellow mustard seeds, crushed
- 4 6-oz. skinless salmon fillets
- salt and freshly ground pepper
- 2 1/2 Tbs. Dijon mustard
- 1 1/2 tsp. dry mustard
- 1 Tbs. olive oil
Chicken with Cashews

1. Mix together vinegar, soy sauce, and sugar, set aside
- 4 Tbsp wine vinegar
- 4 Tbsp soy sauce
- 4 tsp sugar
- 14 oz raw boneless skinned chicken breast, cut into bite-sized pieces
- 1 Tbsp cornstarch
- 2 tsp oil
- 3 green onions, chopped
- 2 cloves garlic, minced
- 1/2-1 tsp crushed red pepper
- 1 tsp grated fresh ginger or 1/2 tsp dried
- Lots of cashews
- 4 cups cooked rice
Reuben Dip

Chop corned beef and mix all ingredients together
- 2 6-oz. pkgs. Carl Budding corned beef
- 1 cup shredded cheddar cheese
- 1 cup shredded Swiss cheese
- 1/2 cup mayonnaise
