Bourbon-Walnut Sweet Potato Mash*

Preheat oven to 350°F. Roast potatoes on rimmed baking sheet until tender, 1 to 1 1/2 hours
- 4 lb red-skinned sweet potatoes (yams)
- 1/2 cup whipping cream
- 6 Tbsp. (3/4 cup) butter
- 1/4 cup pure maple syrup
- 2 Tbsp. bourbon
- 1 1/2 tsp. ground cinnamon
- 1 tsp. ground allspice
- 3/4 tsp. ground nutmeg
- 1 cup walnuts, toasted, chopped
Charmoula Fish Rub

Combine all ingredients. Store in an airtight container away from the light for up to one year
- 2 Tbs. ground cumin
- 1 Tbs. ground coriander
- 1 1/2 tsp. chili powder
- 1 1/2 tsp. sweet paprika
- 1 tsp. ground cinnamon
- 3/4 tsp. ground allspice
- 3/4 tsp. ground ginger
- 1/2 tsp.cayenne
- 1/2 tsp. tumeric
Watergate Cake

Mix cake ingredients together and pour into a greased and floured jelly roll pan
- 1 white cake mix
- 3 eggs
- 1 cup 7 UP
- 1 cup Wesson oil
- 1 sm. pkg. instant pistachio pudding
- 1 1/4 cup milk
- 1 sm. pkg. instant pistachio pudding
- 1 9-oz. container Cool Whip
Cumin Roasted Potatoes*

Mix all ingredients except potatoes in a small bowl
- 1 Tbs. olive oil
- 1 tsp. ground cumin
- 1 tsp.bottled minced garlic
- 1/2 tsp. salt
- 1/4 tsp. ground red pepper
- 2 large baking potatoes
Bean Salad

Drain and rinse beans. Drain corn
- 1 can kidney beans
- 1 can black beans
- 1 can pinto beans
- 1 can corn
- 1 onion, chopped
- 1/2 cup sugar
- 1/3 cup oil
- 1/4 cup vinegar
Tuna Salad*

Drain tuna into a bowl. Using fork, shred tuna into small pieces
- 2 12-oz. cans tuna packed in water
- 6 hard cooked eggs, cooled and chopped
- 1 small red onion, finely chopped
- 1 Tbs. sweet pickle relish
- 1/2 cup mayonnaise
- pinch salt
- pinch pepper
- dash sugar, if desired
Fruit Cobbler

Melt butter in oven in a 9x9 pan
- 1 stick butter
- 1/2 cup sugar
- 1 cup flour
- 2/3 cup milk
- 2 tsp. baking powder
- 1 can pie filling
- ice cream
Fettuccine Alfredo with Chicken*

- 1/2 lb fettuccine, uncooked
- 1 lb.boneless skinless chicken breasts, cut into strips
- 1-1/4 cup fat-free reduced-sodium chicken broth
- 4 tsp.flour
- 4 oz. (1/2 of 8-oz.) PHILADELPHIA Neufchatel Cheese, cubed
- 3 Tbsp. KRAFT Grated Parmesan Cheese, divided
- 1/4 tsp. garlic powder
- 1/4 tsp. pepper
Laurel's Cream of Potato, Bacon & Cheese Soup

Melt butter in large stock pot (or use bacon grease for richer flavor) Finely chop shallots Add shallots and garlic...
- 4 Tbsp. Unsalted butter/or bacon grease
- 1/4 cup flour for roux
- 2-3 peeled shallots finely chopped
- 3 cloves of garlic finely chopped
- 6-8 cup peeled and coarsely diced Yukon gold potatoes
- 6-8 cup Vegetable or Chicken broth/stock
- 1 1/2 cup Half and Half
- 2 cup Shredded sharp cheddar cheese
- 3/4 tsp. Cumin
- Salt and pepper to taste
