Pink Grapefruit Yogurt Cake

Peheat oven to 350 degrees
- For Grapefruit Syrup:
- 3/4 c plain Greek yogurt
- 1 c granulated sugar
- Zest of 1 1/2 pink grapefruits
- 3 lg eggs
- 1 1/2 c all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp vanilla
- 1/3 c canola oil
- 1/4 c freshly squeezed grapefruit juice
- 2 Tblsp granulated sugar
- For Grapefruit Glaze:
- 1/3 c powdered sugar
- 2 to 3 Tblsp freshly squeezed grapefruit juice
Easy Baked Artichokes

Preheat oven to 425 Squeeze 1/2 lemon on the top of each trimmed artichoke
- 2 lg artichokes rinsed and trimmed
- 1 whole lemon, cut in 1/2
- 4 cloves garlic, slivered
- 4 tblsp olive oil
- sea salt to taste
- 4 sheets of heavy duty foil wrap
Thousand Island dressing

Combine all ingredients and mix thoroughly
- 1 c Mayo
- 1/2 c chili sauce
- 1/4 c sweet relish
- 1/4 tsp salt
- 1/8 tsp white pepper
- 1/2 tsp sugar
- 2 tbls white vinegar
- Fresh lemon juice to taste.
Mango Salsa

Yummy on fish/chicken or pork
- 1 Ripe Mango
- 1 Red Pepper (seeded & chopped)
- 2 Plum Tomatoes (seeded)
- 1/2 C Crushed Pineapple (drained)
- 1/2 C Orange Juice (with pulp)
- 1 TBLS Fresh Lime Zest
- Juice of 2 Fresh Lime
- 1 TBLS Tequila
- 1 Serrano Pepper (seeded & finely diced)
Braised Sirloin Tips

- 2 TBLS Olive Oil
- 2 lbs Beef Sirloin Tip (cut to 1" cubes)
- 1 can (10 1/2 oz) Beef Consomme
- 1/3 Red Burgundy Wine
- 2 TBLS Soy Sauce
- 1 Garlic Clove (minced)
- 1/4 tsp Onion Salt
- 2 TBLS Cornstarch
- 1/4 C Water
- 4 C White Rice (cooked)
Nan's Biscuits and Gravy

- 3 strips of Bacon
- or 4 Sausage links/patties
- 3 TBLS Flour
- Pinch of Sugar
- Pinch of Salt
- Cold Milk to thicken gravy
Chicken Burritos

These burritos are extremely rich and very filling
- 4 to 8 oz Diced Green Chiles
- 1 can Cream of Mushroom Soup
- 1 can Cream of Chicken Soup
- 8 oz Sour Cream
- 1 med. Diced Onion
- 1/2 lb shredded Jack Cheese
- 1/2 lb shredded Cheddar Cheese
- 6 cooked Chicken Breasts
- 1 doz 1g Flour Tortillas
Julie's Dip

- 1 can Stagg Laredo chili
- 3 ozs Cream Cheese
- 1 cup Shredded Cheddar/Jack Cheese
- 1 loaf SourDough Bread (torn into chunks)
Margarita Chicken

Light and Tangy -- Easy to prepare ahead for summertime BBQ
- Marinade:
- 6 Chicken Breast (boneless, skinless)
- 1/2 C Tequilla
- 4 TBLS Sugar
- 4 TBLS Fresh Lime Juice
- 2 tsp Fresh Lime Zest
- 1 tsp Kosher Salt
- 2 to 4 Jalapeno Chiles (seeded, chopped)
- Garnish:
- Lime wedges and chopped cilantro.
Chocolate Crackles Cookies

Preheat oven to 350. Grease or line cookie sheet
- 4 ozs. (4 squares) Unsweetened Chocolate, melted & cooled
- 1/2 c Vegetable Oil
- 4 Eggs
- 2 tsp Vanilla
- 2 c All-Purpose Flour
- 2 tsp Baking Powder
- 1/2 tsp Salt
- 1/2 c Chopped Walnuts/Pecans (optional)
- 1/2 c Powdered Sugar
