- 1 c Milk (2%)
- 2 TBLS Butter(salted)
- 1/2 tsp Salt
- 2 TBLS Flour
- 1 TBLS Sugar
- 1/2 c Bread Crumbs (Plain)
Irish Coffee

California Fish Tacos

- Marinade:
- 6 Tilapia Fish Filets
- 1 to 2 dozen White Corn Tortillas
- 3 to 4 Fresh Limes (cut into wedges)
- 1/2 c Butter (salted)
- 1/2 c Olive Oil
- 3 to 4 cloves of garlic (minced)
- 1 med. Brown Onion
- 1 large Bunch of Cilantro
- Condiments:
- Typical Taco Toppings
- Shredded Jack/Cheddar Cheese
- Shredded White Cabbage
- Diced Tomatoes
- Diced Green Onion
- Diced Onion (mixed w/fresh Cilantro)
- Sliced Black Olives
- Salsa (fresh or store bought)
- Sliced Avocado
- White Sauce:
- 1/2 c Sour Cream
- 1/4 c Mayo
Italian Sausage Supper

- 1 lb Spicy Italian Sausage (casings removed)
- 1 C Brown Onion (chopped)
- 3 med Zucchini (sliced)
- 2/3 C Tomato Paste
- 1 C Water
- 1 tsp Basil Leaves (dried, crushed)
- Salt to taste
- 3 C Rice or Pasta (cooked)
- 1 C Mozzarella Cheese (shredded)

French Onion Soup

- 3 C Brown Onion, thinly sliced
- 3 TBLS Oil
- 4 to 5 C Beef Stock
- 1/2 C Vermouth
- 4 to 5 Thick Slices DRY French Bread
- 3 oz Swiss Cheese, grated
- 1/4 C Parmesan Cheese, grated
Zucchini Cakes

Place grated zucchini in a colander, sprinkle lightly with salt and let stand 30 min
- For Dipping Sauce:
- 3 c Coarsely Grated Zucchini
- 1/2 tsp Salt
- 1 c Fresh Breadcrumbs (use day old Baguette)

- 2 Green Onions, thinly sliced
- 1/4 c Diced Red Pepper
- 1 1/2 tsp Old Bay Seasoning
- 1 tsp Dijon Mustard
- 1 Tblsp Mayo or Plain Yogurt
- 1/8 tsp Red Pepper Flakes
- 2 Tblsp Canola Oil]
- 1 tsp Butter
- 1/4 c Chopped Fresh Herbs (chives or dill)
- Juice from 1 Lemon
- 1/2 c Mayo or Plain Yogurt
