- 1/2 cup fresh orange juice
- 1/4 cup fresh lime juice
- 2 tablespoons olive oil
- 2 garlic cloves, mashed
- 1 tablespoon dried oregano, crumbled
- 1 teaspoon ground cumin
- 1/4 cup chopped cilantro
- 1/4 cup thinly sliced red onion
- Salt and freshly ground pepper
- 3/4 pound boneless roast pork, very coarsely shredded
- 4 soft hero rolls, split but still attached at one side
- 6 ounces Black forest ham
- 4 ounces sliced Genoa salami
- 6 ounces sliced Swiss cheese
- 2 large dill pickles, thinly sliced lengthwise
- Yellow mustard and hot sauce, for serving
- Melted unsalted butter, for brushing
The Hotter Toddy

- 1 tsp Honey
- Juice of 1/4 Lemon
- 1 Cinnamon Stick
- Small Dash Cayenne Pepper
- 1 Earl Grey Tea Bag (any tea bag of your choice really)
- 3 Whole Cloves
- Non-juiced Lemon Wedge
- Slug of Bourbon or Irish Whiskey
- 1 1/2 c Boiling Water

- 6 Roma Tomatoes
- 1 lb Fresh Mozzarella
- 10 to 15 Fresh Basil Leaves
- 3 TBLS Olive Oil
- Kosher Salt
- Freshly Ground Black Pepper
Letha's Potato Salad

Family favorite and great for picnic's, tailgate's and family bbq's
- 2 to 4 lbs Russet Potatoes
- 1 med Brown Onion (diced)
- 1/4 to 1/2 C Italian Dressing (Wish Bone)
- 1/2 to 1 C Celery Stalks (chopped)
- Mayo -- just enough to combine
- Salt and Pepper to taste
Vodka Cream Pasta Sauce

Yummy, this is FANTASTIC. You all will love this sauce
- 1 TBLS Extra Virgin Olive Oil
- 1 TBLS Butter
- 2 cloves Garlic (minced)
- 2 Shallots (minced)
- 1 C Vodka
- 1 C Chicken Stock
- 1 32 oz Crushed Tomatoes
- 1/2 C Heavy Cream
- 20 Basil Leaves (chopped or torn)
- Coarse salt and pepper to taste
- 1/2 tsp Red Pepper Flakes
- Prepare favorite pasta according to directions on box.

- 1/4 Flour
- 1/2 tsp Fresh Ground Nutmeg
- 1/2 tsp Cinnamon
- Dash of Salt
- 6 C Pippen Apples (sliced/peeled)
Mexican Chicken Soup

Fantastic on a cold winter day
- Garnish:
- 4 Split Chicken Breasts
- 2 TBLS Olive Oil
- 1 C Celery (chopped)
- 2 C Carrots (chopped)
- 2 C Onions (chopped)
- 4 lg Garlic Cloves (chopped)
- 2 32 oz Boxed Chicken Stock
- 2 to 3 cans of Zesty Tomatoes (diced)
- 3 to 4 Jalapeno Peppers (seeded/diced)
- 3 to 4 Serrano Peppers (seeded/diced)
- Wear Rubber Gloves to Preparing peppers
- 1 1/2 tsp Ground Cumin
- 1 tsp Ground Coriander Seed
- 1/4 to 1/2 C Cilantro (chopped)
- Salt/Pepper to taste and season chicken before roasting.
- Sliced Avocado, TBLS Sour Cream, Shredded Jack Cheese, Juice from Lime Wedge, Crushed Tortilla Chips

- 1 5 1/2 ounce pkg Graham Crackers, Crushed (Approx. 1 2/3 C)
- 1/4 C Sugar
- 1/4 C plus 2 TBLS Butter, melted
- Cheesecake:
- 3 8oz pkgs Cream Cheese, softened
- 1 C Sugar
- 4 Eggs
- 1/3 C Amaretto
- Topping:
- 1 1/2 Sour Cream
- 2 TBLS Sugar
- 2 TBLS Amaretto
- 1/4 Almonds, sliced & toasted
- Grated Unsweetened Chocolate
- Strawberries, halved
