Sharon's Chicken Marsala

Better than any Italian restaurant
- 4 chicken Breasts (cut in 1/2)
- 2 to 3 TBLS Olive Oil
- 1/2 C Flour
- 1 lb Button Mushrooms (sliced)
- 4 TBLS Butter
- 1 to 2 C Sweet Marsala Wine (Columbo)
- 2 TBLS Fresh Lemon Juice
- 1 Garlic Clove (crushed)
- Salt & Pepper to taste
Easy Sauteed Fish w/Lemon Vinaigrette

Basic Technique: Season fish with salt and pepper
- Lemon Vinaigrette:
- 1 Fish fillet, such as fresh halibut, sea bass, or salmon
- Sea Salt
- Freshly Ground Pepper
- 2-3 Tblsp Oil, Sunflower or Grapeseed
- Splash of Lemon Vinaigrette
- From 1 to 2 Meyer Lemons, finely grated zest and 2-3 oz juice
- 1 tsp Kosher Salt
- 1 tsp Sugar
- 1/4 tsp Ground White Pepper
- 1 c Mild oil, Sunflower or Grapeseed
Avocado, Mango & Arugula Salad

Very tasty salad. Be ready to serve quickly when you add dressing
- Dressing:
- 4 tsp Red Wine Vinegar
- 2 tsp Orange Juice (fresh squeezed)
- 2 tsp Orange Zest
- 6 TBLS Olive Oil
- Salt/Pepper to taste
- Salad:
- 1 Avocado (ripe)
- 1 Mango (ripe)
- 1/2 C Red Onion (thinly sliced)
- 6 C Arugula (stemmed, can substitute baby spinach)
- 2 TBLS Roasted, toasted Pumpkin Seeds
Chicken, Mushroom & Spinach Alfredo Lasagna

This recipe has lot's of flavor
- Emeril's Essence Creole Seasoning:
- 8 TBLS (1 stick) of Unsalted Butter
- 1 lb Button Mushrooms (sliced thinly)
- 1 C Brown Onion (chopped)
- 3 TBLS Garlic (minced)
- 1/2 C All-Purpose Flour
- 7 C Milk
- 2 tsp Kosher Salt
- 1/2 tsp Freshly Ground Pepper
- 1/4 tsp Freshly Grated Nutmeg
- 1 lb Fresh Spinach
- 3 C Freshly Grated Parmesan Cheese
- 2 TBLS Olive Oil, plus what is needed to oil the pan
- 2 lbs Boneless, Skinless Chicken Breast
- 1 TBLS Emeril's Essence (recipe follows)
- 1 lb Oven-Ready Lasagna Sheets
- 1 TBLS Butter (cut into 8 pieces
- 2 1/2 TBLS Paprika
- 2 TBLS Salt
- 2 TBLS Garlic Powder
- 1 TBLS Black Pepper
- 1 TBLS Onion Powder
- 1 TBLS Cayenne Pepper
- 1 TBLS Dried Oregano
- 1 TBLS Dried Thyme
- (Yields: 2/3 C)
Chile Relleno Casserole

Yummy brunch dish that is very easy but a HIT with everyone I've served it to :)
- 2 cans(4oz) Green Chiles (diced) I use 4 cans
- 1 lb Monterey Jack Cheese (shredded)
- 1 lb Sharp Cheddar Cheese (shredded)
- 4 Egg Yolks
- 4 Egg Whites
- 2/3 cup of Evaporated Milk
- 1 TBLSP Flour
- 1/2 tsp Salt
- 1/8 tsp Pepper
- 2 Medium Tomatoes (sliced)
Grilled Tropical Island Chops w/Pineapple-Cucumber Salsa

The Pineapple-Cucumber Salsa is very refreshing
- Dry Rub:
- 2 TBLS Brown Sugar
- 1 TBLS Freshly Grated Lime Zest
- 1 TBLS Dried Thyme
- 1 clove of Garlic (minced)
- 1 tsp Dry Mustard
- 6 Pork Loin Chops
- Pineapple-Cucumber Salsa:
- 20 oz can Pineapple tidbits (drained)
- 2 med. Cucumbers (peeled/seeded/diced
- 2 TBLS Fresh Mint
- 1/2 Jalapeno Pepper(seeded/fine chopped)
- 1 TBLS Brown Sugar
- 1 TBLS Grated Ginger-root
- 1 TBLS Fresh Lime Juice
Corned Beef

- 4 lbs Corned Beef
- 2 C Carrots (diced)
- 2 C Russet Potatoes (cut into 1/4's)
- Water to cover meat.
Mushroom Rissotto

Bring oil & butter to a med/high heat & saute shallots for 2 min
- 2 c Arborio Rice
- 4 c chicken broth
- 2 shallots, finely chopped
- 3 garlic cloves, finely chopped
- 1-2 c cremini mushrooms, roughly chopped
- Salt & Pepper to taste
- 1/2 c Parmesan cheese, grated
- 2 Tblsp olive oil
- 2 Tblsp butter
Spicy Shrimp Salad

This salad is easy to prepare and great for a pot luck
- 1 lb Frozen Shrimp (cooked,sm/med size)
- 3 TBLS Olive Oil
- 7 Garlic Cloves (pressed)
- 1/2 tsp Crushed Red Pepper
- 1 C Corn (frozen)
- 1 C Cherry Tomatoes
- 1/4 C Red Onion (diced)
- 1/2 C Cilantro (chopped)
- 1 C Mozzarella Cheese (cut into cubes)
- Juice of 1/2 Fresh Lemon
