This is so simple and easy to make
- 3/4 c Rice
- 1/4 c Orzo Pasta
- 1/2 stick Butter (salted)
- 2 1/4 c Chicken Broth
- 1 med Onion (chopped)
- 4 oz Sliced Mushrooms
Crab Jicama "Seviche" on Cucumber

I have made this as an hors d'oeuvres for tailgates and parties
- 1 sm Jicama (peeled and cut in 1/2)
- 1/4 lb Lump Crab Meat (approx. 3/4 C)
- 2 TBLS Fresh Lime Juice
- 2 TBLS Scallion Greens (chopped)
- 2 Jalapeno Peppers (seeded/chopped)
- 2 Serrano peppers (seeded/chopped)
- Wear Rubber Gloves when preparing peppers
- 1/3 C Plum/Roma Tomatoe (seeded/chopped)
- 1/2 tsp Garlic Clove (minced)
- 1 Avocado (mashed)
- 1 Cucumber (seedless/English variety)
Beef Brisket

On a cutting board, mash the garlic and 1/2 teaspoon of the salt together with the flat-side of a knife into a past...
- 4 large garlic cloves, smashed
- 1/2 teaspoon kosher salt, plus more for seasoning
- 4 sprigs fresh rosemary, needles striped from the stem and chopped
- 1/4 cup extra-virgin olive oil
- 1 (4 pound) beef brisket, first-cut
- Coarsely ground black pepper
- 4 large carrots, cut in 3-inch chunks
- 3 celery stalks, cut in 3-inch chunks
- 4 large red onions, halved
- 2 cups dry red wine
- 1 (16-ounce) can whole tomatoes, hand-crushed
- 1 handful fresh flat-leaf parsley leaves
- 3 bay leaves
- 1 tablespoon all-purpose flour (optional)
- Potato Pancakes, recipe follows

- Preheat the oven to 325 degrees F.
Meatballs w/Mushroom Gravy

This was one of the first recipes I ever learned to make
- 1 lb Lean Hamburger
- 1 Brown Onion (sliced)
- 1 1/2 lb Button Mushrooms (sliced)
- 1/2 C Worcester Sauce
- 1 Can of Cream of Mushroom Soup
- 1/2 Can of Milk (pour into soup can)
Archie's Chili

Archie was a very dear, dear neighbor
- 2 lbs Lean Ground Beef
- 1 pkg Carroll Shelby's Chili Kit
- 1 15 oz Can Tomato Sauce
- 2 15 oz Cans of Spicy or Fire Roasted Diced Tomatoes
- 1 Med Green Pepper -- Diced/Seeded
- 1 Med Red Pepper -- Diced/Seeded
- 1 Med Brown Onion -- Diced
- 1 Cup Celery -- Diced
- 1 Lg Can Ranch Style Pinto Beans
- 3 Sm Cans Ranch Style Pinto Beans w/Jalapeno peppers
- 1 to 2 TBLS Chili Powder
- 1 to 2 TBLS Smoked Paprika
- Salt and Pepper to taste
- Shredded cheese & diced onion for toppings
Pecan Balls

Marjorie's Mandarin Orange Cake

Quick and Easy -- a crowd pleaser
- 1 pkg. White Cake Mix (Pillsbury)
- 2 lg. Eggs
- 1/3 c Unsweetned Applesauce
- 1 11 oz. Can Mandarin Oranges -- DO NOT DRAIN JUICE
- 1 8 oz. container of Cool Whip -- thawed
- 1 8 oz. can Crushed Pineapple -- DO NOT DRAIN JUICE
- 1 pkg. (3.4 oz) Instant Vanilla Pudding
Letha's Salsa

A real party pleaser. I always serve this when company comes over
- Base:
- 1 32 oz Canned Tomatoes
- 1 bunch of Cilantro
- 3 to 6 Serrano Chiles (diced)
- 1 tsp. Oregano (dried)
- 1 tsp. Basil (dried)
- (If you choose fresh herbs use 2 TBLS)
- Dash of Garlic Powder
- Just before you serve add:
- Diced Brown Onion
- Diced Green Onion (one bunch)
- 2-3 Diced Fresh Tomatoes
- Juice from 1 Lemon and 1 Lime
Broccoli Salad

Great for pot lucks. Have to make day ahead to let marinate
- Dressing:
- 2 lbs Broccoli Florets
- 1/3 C Raisins
- 1/4 C Pine Nuts
- 1/2 lb Penne Pasta (cooked & chilled)
- 3 Green Onions (chopped)
- 1/2 C Bacon (cooked & crumbled)
- 1/2 C Brown Sugar
- 1 C Mayonnaise
- 2 TBLS Red Wine Vinegar
