Albondigas Soup

Family favorite -- Easy to make with prepared frozen meatballs from Costco
- 1/3 to 1/2 Bag of Frozen Meatballs
- 2 32oz Boxes of Beef Broth
- 3 cans Zesty Diced Tomatoes
- 4 to 5 Garlic Cloves (pressed)
- 2 C Carrots(diced)
- 1 1/2 C Celery Stalks (split/diced)
- 1 1/2 Brown Onions (diced)
- 3 Jalapeno Peppers (seeded/diced)
- 3 Serrano Peppers (seeded/diced)
- Wear Rubber Gloves when preparing peppers
- 1 1/2 tsp Ground Cumin
- 1 1/2 tsp Dried Thyme
- 1 tsp Celery Salt
- 1 tsp White Pepper
- 1 1/2 tsp Dried Basil
- 1 1/2 tsp Dried Oregano
- 1 Bunch of Cilantro (chopped)
- 1 pkg. Guerrero Tostadas
- 3 to 4 Fresh Limes (cut in wedges)
- Queso Fresco Mexican Cheese
Split Pea Soup

I make this after big holidays
- 1 16 oz pkg Split Peas
- 8 C Water
- 1 left over Ham Bone and Ham
- 3 1/2 C Carrots (sliced)
- 1 C Brown Onion (diced)
- 1 C Celery Stalks (diced)
- 2 to 3 Bay Leaves
- 1 TBLS Garlic Clove (minced)
- 2 Sticks of Butter
Chocolate Chip Pie

Tastes just like chocolate chip cookie
- 9 " unbaked Pie shell in pie plate
- 1/2 C Softened Butter
- 2 Eggs, beaten
- 2 tsp. Vanilla or 2 TBLS Bourbon
- 1 C Sugar
- 1/2 C Flour
- 1 C Chocolate Chips (Semi-Sweet)
- 1 C Chopped Pecans or Walnuts
Rossi Pasta Tomato Basil Garlic Chicken

The pasta from Rossi Pasta is FANTASTIC
- 1 pkg Rossi Pasta Tomato Basil Garlic Fettuccini
- 1/4 c pine nuts
- 3/4 c basil, chopped
- 3/4 c parmesan cheese, grated
- 1/4 c parsley, chopped
- 1/2 c olive oil
- 1 lb chicken, diced (I use chicken breast)
- 1 c artichoke hearts
- 1/2 c olives
- 1/4 c sun-dried tomatoes
Basil-Caper Vinaigrette with Grilled Vegetables

Combine all ingredients in small bowl
- Vinaigrette:
- 1 c Loosely Packed Fresh Basil Leaves, Finely chopped
- 3 Tblsp Extra Virgin Olive Oil
- 1 Tblsp Red Wine Vinegar
- 1 Tblsp Bottled Capers, drained
- 2 tsp Dijon Mustard
- 1 tsp Fresh Thyme Leaves, chopped
- 1/2 tsp Garlic, minced
- Vegetables:
- 1/4 c Extra-Virgin Olive Oil
- Salt & Pepper to taste

- 3 to 4 TBLS Olive Oil
- 3 lg Just RIPE Tomatoes (1 1/2 lbs)
- Kosher Salt
- Freshly Ground Pepper
- 1/3 to 1/2 C Kalamata Olives (pitted & slivered)
- 1/3 C Green Onions including stems
- 1 TBLS Fresh Flat-Leaf Parsley (chopped)
- 1 TBLS Fresh Basil (chopped)
- 1 tsp Red Wine Vinegar
- 1 tsp Fresh Garlic (minced)

- 1 can Refrigerated Croissant Dough
- 12 Slices Gallo Dry Salame
- 2 Roma tomatoes (diced 1/4")
- 8 Basil Leaves (fresh cut into thin strips)
- 1/4 C Red Onion (finely chopped)
- 1 TBLS Balsamic Vinegar
- 2 TBLS Spaghetti Sauce
- 2 Slices Provolone Cheese
Cranberry Relish w/Orange & Ginger
