Family favorite -- Easy to make with prepared frozen meatballs from Costco

  • 1/3 to 1/2 Bag of Frozen Meatballs
  • 2 32oz Boxes of Beef Broth
  • 3 cans Zesty Diced Tomatoes
  • 4 to 5 Garlic Cloves (pressed)
  • 2 C Carrots(diced)
  • 1 1/2 C Celery Stalks (split/diced)
  • 1 1/2 Brown Onions (diced)
  • 3 Jalapeno Peppers (seeded/diced)
  • 3 Serrano Peppers (seeded/diced)
  • Wear Rubber Gloves when preparing peppers
  • 1 1/2 tsp Ground Cumin
  • 1 1/2 tsp Dried Thyme
  • 1 tsp Celery Salt
  • 1 tsp White Pepper
  • 1 1/2 tsp Dried Basil
  • 1 1/2 tsp Dried Oregano
  • 1 Bunch of Cilantro (chopped)
  • 1 pkg. Guerrero Tostadas
  • 3 to 4 Fresh Limes (cut in wedges)
  • Queso Fresco Mexican Cheese

  • 3 1/2 C Carrots (sliced)

  • 1 TBLS Garlic Clove (minced)
  • 2 Sticks of Butter
