Cinnamon-Pecan Coffee Cake w/Strawberry-Pecan Butter

Preheat oven to 350 degrees
- For the coffee cake:
- 2 1/4 c all-purpose flour
- 1/2 tsp salt
- 2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1 c light brown sugar, Packed
- 3/4 c sugar
- 3/4 canola oil
- 1 c coarsely chopped pecans
- 1 tsp baking powder
- 1 tsp baking soda
- 1 lg egg
- 1 c buttermilk
- For the butter:
- 2 sticks unsalted butter at room temp.
- 8 oz's strawberry preserves (not jam)
- 1/2 to 1 c confectioners' sugar
- 1/2 c coarsely chopped pecans
Tomato, Basil and Mozzarella Bruschetta

Preheat oven to 375 degrees F
- 1 (32-ounce) can whole tomatoes, drained
- 1 cup fresh basil leaves, washed and spun dry
- 4 tablespoons extra-virgin olive oil
- 6 cloves garlic, peeled
- Kosher salt and freshly ground black pepper
- 2 large French baquettes, sliced 1-inch thick (about 36 slices)
- 1 1/2 pounds fresh mozzarella cheese, sliced 1/4-inch thick
Olive Garden Chicken Marsala

Pound chicken breasts between sheets of plastic wrap until about 1/4" thickness
- 4 Chicken Breasts, boneless & skinless
- 1/2 c Flour
- Salt to taste
- Pepper to taste
- Dried Oregano to taste
- 4 Tblsp Butter
- 2 c Fresh Mushrooms, Sliced
- 1 c Marsala Wine

- 1 doz small orange/red/yellow peppers
- 1 c Parmesan Cheese (shredded)
- 1 lb Jimmy Dean Sausage (cooked/drained)
- 1 8 oz Cream Cheese (softened)
Cuban Pork Sandwich

I prepared this in a crock pot
- Cuban Pork:
- Ingredients
- 1 pound boneless pork shoulder
- Kosher salt and freshly ground black pepper
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 2 tablespoons extra-virgin olive oil
- 4 cloves garlic, peeled and gently smashed with the side of your knife
- 1/4 teaspoon dried red chili flakes
- 1 medium onion, sliced
- 1 cup fresh orange juice
- 1 lime, juiced
- 1 cup low-sodium chicken broth
- 2 bay leaves
- 1 long Cuban bread roll
- 3 tablespoons Dijon mustard
- 8 thin slices Swiss cheese
- 1 cup bread and butter pickles
- 8 thin slices deli ham
- Kosher salt and freshly ground black pepper
- Olive oil
Crab Stuffed Mushrooms

Yummy appetizer and easy to prepare
- 20 to 24 Fresh Mushrooms (Large/about 1 lb)
- 1 C Italian Salad Dressing
- 3/4 C Breadcrumbs-Divided (soft - I use
- plain bread crumbs from grocery store)
- 1 6 oz can of Crabmeat, drained/flaked
- 2 Eggs, beaten
- 1/4 C Mayonnaise
- 1/4 C Onion, minced
- 1 tsp Fresh Lemon juice
Dump Cake

So easy a child can make it :) This is a favorite of my children
- DUMP directly in 9x13 pan in order of ingredients.
- 2 cans Cherry Pie Filling
- 1 lg can Crushed Pineapple
- 1 box Yellow Cake Mix
- 1 stick of melted Butter
- If desired spread thin layer of Shredded Coconut and top with chopped pecans. Serve warm w/Vanilla Ice Cream or top with Cool Whip
Letha's Pasta Sauce

I made this sauce for all pasta's
- 3 28 oz. Canned Crushed Tomatoes
- 3 15 oz. Canned Tomato Sauce
- 4 6 oz. Canned Tomato Paste
- 2 lbs. Ground Round
- 2 lbs. Hot Italian Sausage
- 1 Stick Pepperoni
- 1 lg Brown Onion
- 1 med. Green Pepper
- 2 lg. Carrots
- 2 lg Celery Stalks
- 1/2 lb Button Mushrooms
- 3 to 4 Garlic Cloves
- 1/2 c Fresh Basil
- 1/4 c Fresh Thyme
- 3 TBLS Fresh Oregano
- 3 TBLS Fresh Rosemary
- 3 TBLS Fresh Marjoram
- 3 TBLS Fresh Parsley
- 2 TBLS Fresh Savory
- You may substitute dry herbs. Decrease quantities by half.
Herbed Shrimp & Pasta

Very light and summer time meal
- 1/2 pkg. Penne Pasta (cooked)
- 1 C Butter
- 1 1/2 lb Fresh Shrimp(peeled)
- 4 Garlic Cloves (minced)
- 2 C 1/2 & 1/2 Cream
- 1/2 C Fresh Parsley (chopped)
- Salt & Pepper to taste
- 2 tsp Fresh Dill (chopped)
- Garnish with Fresh Dill Sprigs
Grilled Chile-Lime Shrimp & Scallops

Added a 1/2 lb scallops and served over Arugula :)
- Vinaigrette Dressing:
- 1 tsp. finely shredded lime peel
- 1/4 cup lime juice (about 1-1/2 limes)
- 2 jalapeño seeded and finely minced*
- 2 serrano peppers (seeded & minced)
- 1 Tbsp. garlic, minced
- 2 Tbsp. low-sodium soy sauce
- 3 Tbsp. olive oil
- 1 tsp. chili powder
- 1/4 tsp. cayenne pepper
- 2 Tbsp. cilantro
- 1 Tbsp. honey
- 1-1/2 lb. medium shrimp (about 6 per person)
- 1/2 lb. Bay Scallops
- 1 lb. Fresh Baby Arugula
- 1 Tblsp. wine vinegar
- 1 1/2 tsp. minced shallot
- 1/2 tsp. mayo
- 1/2 tsp. Dijon mustard
- Dash of Salt & Pepper
- 3 Tblsp. extra-virgin olive oil
