Mom's Chicken Soup

Wash chicken and add to a large pot
- 3 to 4 Chicken Breast
- 1 med Brown Onion (diced)
- 3 lg Carrots (diced)
- 3 lg Celery Stalks (diced)
- 1 tsp Poultry Seasoning
- 1 tsp Ground Sage
- 1 tsp Ground Marjoram
- 2 tsp Dried Thyme (dbl if using Fresh)
- 1 tsp White Pepper
- Salt & Black Ground Pepper to taste
- Water
- Pasta or White Rice
Homemade Mayonnaise

Yummy and Creamy
- 1 egg yolk, room temperature
- 2 tsp lemon juice
- 1 tsp dijon mustard
- 1/4 tsp kosher salt
- 3/4 c neutral oil, like safflower or canola
Mexican Rice

This recipe is BETTER than any restaurant rice and so very easy to prepare :) Enjoy
- 2 cups Long Grain White Rice (rinsed)
- 4 cups Chicken Broth
- 1 med. Onion (yellow or brown), diced
- 3 med Jalapeno Peppers, minced
- 1-2 Serrano Peppers, minced
- 3-4 Garlic Cloves, minced
- 1/3 c Canola Oil
- 1/2 - 1 tsp Salt
- 1/2 c Fresh Cilantro, minced
- 1 lime
- 1 14.5 oz Petite Cut Diced Tomatoes w/Chipotle Chilies
Nan's Fruit Salad

- 1 Red Delicious Apple
- 1 Navel Orange
- 1/2 C Celery chopped
- 1/2 C Pecans chopped
- 1 Fresh Pineapple
- 1 sm can Fruit Cocktail
- 1 Pkg. Dream Whip
Pan-Roasted Chicken & Vegetables

Preheat oven to 425. Cut potato slices crosswise in half
- 2 lg Unpeeled baking potatoes, cut 1/4" slices
- 1 each med. zucchini, yellow summer squash & red bell pepper, cut 1" pieces
- 1 med red onion, cut into wedges
- 4 Tblsp olive oil, divided
- 2 garlic clovesm, pressed
- 1 tsp crushed dried rosemary, divided
- 1/2 tsp plus 1/8 tsp salt, divided
- 1/8 tsp black pepper
- 1 egg
- 1/2 c seasoned dry bread crumbs
- 4 boneless, skinless chicken breast halves
