Directions Set a large saucepan of salted water to boil

- 8 thin chicken cutlets (1 1/2 pounds total)

- 1 package (10 ounces) frozen leaf spinach, thawed and squeezed dry
- 4 ounces Brie cheese, cut into 8 slices
- 1 cup orzo
- 2 plum tomatoes, cored and chopped
- 1/4 cup chopped fresh parsley
- 1 tablespoon butter
- 1 tablespoon fresh lemon juice

- 1 Pint heavy whipping cream
- 1/2 cup butter
- 1 1/2 cups parmessan cheese
Taco Salad with Creamy Green Dressing

- seasoned taco meat or freezer taco meat
- beans
- shredded cheese
- tortilla chips
- shredded lettuce
- salsa

- 3/4 cup green taco sauce
- 1/2 cup plain yogurt
- 1 tablespoon lemon juice
- 1 tablespoon white wine vinegar
- 1 tablespoon honey
- salt and pepper to taste
Chicken Pot Pie with Bisquick

Heat oven to 400°F. In ungreased 9-inch pie plate, stir vegetables, chicken and soup

- 1 1/2 lbs grilled chicken breast, frozen
- 1/4 tsp cumin
- 1/4 tsp chili powder

- 1/4 tsp mesquite seasoning
- 3 T water
- 1 medium onion, sliced
- 1/2 – 1 green pepper, sliced

Quick Creamy Potato Soup
