Cowboy Caviar

1. Combine all ingred. in bowl
- 2 (15oz) cans black beans, rinsed
- 1 (17 oz) can whole kernel corn, drained
- 2 large tomatoes, chopped
- 1 large avocado, diced
- 1/2 red onion, chopped
- 1/4 cup chopped fresh cilantro
- Dressing
- 1 Tbsp red wine vinegar
- 3-4 Tbsp lime juice
- 2 Tbsp olive oil
- 1 tsp salt
- 1/2 tsp pepper
Chocolate Chip Cookie Recipe

Preheat oven to 375 F. If you have an electric mixer, cream butter, sugar and egg
- Makes 2 dozen
- 1 stick unsalted butter
- 3/4 cup white sugar
- 1 egg
- 1 cup all-purpose flour or white whole wheat flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla
- 1 cup dark chocolate chips

- 2 tablespoon Sugar
- 1 Egg (lightly beaten)

Bob’s Red Mill Whole Wheat Carrot Cake

Mix together sugars, oil, eggs, salt and cinnamon
- 1/2 cup Brown Sugar
- 1/2 cup White Sugar
- 1/2 cup Canola Oil
- 2 Eggs
- 1/2 tsp. Salt
- 1 tsp. Cinnamon
- 1 cup Whole Wheat Pastry Flour ( I have used regular whole wheat it is just a little heavier)
- 1 cup Carrot, grated
- 1/4 cup Walnuts, chopped ( I left these out, but you could also use pecans)
- 3/4 tsp. Baking Soda
- 1 tsp. Baking Powder
- 8 oz. Pineapple, crushed and drained
