Honey Dijon Mustard Pork Loin

- 1 (3 to 4-pound) boneless pork loin
- Salt and freshly cracked black pepper
- 2 tablespoons white wine vinegar
- 3/4 cup Dijon mustard
- 1 tablespoon freshly chopped parsley leaves
- 1 tablespoon freshly chopped chives
- 1 tablespoon freshly chopped tarragon leaves
- 3 tablespoons vegetable oil

Chicken and Orzo

DIRECTIONS Recipe makes four 3-ounce servings of chicken with one heaping cup of vegetables and orzo
- INGREDIENTS
- 16 oz chicken breast, boneless and skinless
- 2 garlic cloves, chopped
- 18 oz chicken stock or broth, low sodium
- 1 1/2 t Italian seasoning
- 2 zucchini, quartered, sliced in half and chopped
- 2 tomatoes, plum, deseeded and chopped
- 1 bell pepper, red or orange
- 1 c orzo
- 1 T parsley, chopped
- 1 T capers, drained and rinsed

Directions LINE 9-inch-square baking pan with foil
- 3 cups granulated sugar
- 3/4 cup (1 1/2 sticks) butter or margarine
- 2/3 cup (5 fl.-oz. can) NESTLÉ® CARNATION® Evaporated Milk
- 2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Premier White Morsels
- 1 jar (7 oz.) marshmallow crème
- 1/2 cup finely crushed cream-filled chocolate sandwich cookies
- 1 teaspoon vanilla extract (optional)
- 1 cup crumbled cream-filled chocolate sandwich cookies
Snow Balls

Combine: 3 cups flour 1 1/4 cup soft butter 1 tbs
- 6 oz. peanut butter morsels
- 1/2 cup semi - sweet morsel
- Melt morsels and remove from heat.
- Add 1/4 cup sugar and 1/4 cup finely chopped nuts.
- Chill this mixture for 45 minutes and then roll into balls.
Chicken & Spinach Soup with Fresh Pesto

Heat 2 teaspoons oil in a large saucepan or Dutch oven over medium-high heat
- 2 teaspoons plus 1 tablespoon extra-virgin olive oil, divided
- 1/2 cup carrot or diced red bell pepper
- 1 large boneless, skinless chicken breast (about 8 ounces), cut into quarters
- 1 large clove garlic, minced
- 5 cups reduced-sodium chicken broth
- 1 1/2 teaspoons dried marjoram
- 6 ounces baby spinach, coarsely chopped
- 1 15-ounce can cannellini beans or great northern beans, rinsed
- 1/4 cup grated Parmesan cheese
- 1/3 cup lightly packed fresh basil leaves
- Freshly ground pepper to taste
- 3/4 cup plain or herbed multigrain croutons for garnish (optional)
Grilled Pesto Shrimp with Pasta

1 If using bamboo skewers, soak in water 30 minutes
- Bamboo or metal skewers
- 2 cups uncooked penne or mostaccioli pasta
- 1 lb uncooked deveined peeled large shrimp (tail shells removed)
- 2 medium zucchini, cut into 1/2-inch slices
- 1 cup cherry tomatoes
- 1/2 cup basil pesto
- 1 oz shredded fresh Parmesan cheese (1/4 cup)
Brown Rice Salad

Mix all ingredients, toss, then chill or serve at room temperature:
- Small can of Mandarin oranges, drained
- Uncle Ben's brown ready rice, cooked and cooled
- Toasted, slivered almonds
- 1/2 to 1 package of broccoli slaw
- Ginger salad dressing to taste
Grilled Tuna Nicoise Salad

Heat grill to medium. Whisk together vinegar, oil, shallot, and mustard
- Cook fresh fish fillets and whip up a vinaigrette that marries the flavors in this one-dish meal.
- WORK TIME: 15 MINUTES TOTAL TIME: 30 MINUTES SERVINGS: 4
- 2 Tbsp champagne or white wine vinegar
- 2 Tbsp extra virgin olive oil
- 1 lg shallot, minced
- 1 tsp Dijon mustard
- 4 tuna fillets (6 oz each)
- 1 lg heart romaine lettuce (8 oz), trimmed
- 4 oz cooked green beans
- 1 1/2 c cherry tomatoes, halved
- 4 cooked new potatoes, quartered
- 1/4 c sliced red onion
- 12 caper berries
- 28 nicoise olives
