Barbeque Beef Sandwiches with Cole Slaw

Directions In a small saucepan, bring the barbecue sauce and scallion to a simmer
- 1/3 cup smoky barbecue sauce
- 1 scallion, thinly sliced
- 12 ounces sliced roast beef, cut into 2" x 1/2" strips
- 2 tablespoons reduced-fat sour cream
- 2 tablespoons light mayonnaise
- 1 tablespoon prepared horseradish
- 2 teaspoons white wine vinegar
- 1 teaspoon honey
- 1 teaspoon jalapeno pepper sauce
- 3 cups shredded cabbage and carrot coleslaw mix
- 4 soft whole wheat rolls or sandwich buns
Biscuit Crust Pizza

1. In a medium-sized mixing bowl, whisk together the flour, baking powder, and salt
- Biscuit Crust Ingredients:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 5 tablespoons cold butter, sliced
- 3/4 cup milk
- Topping Ingredients:
- 1 tablespoon melted butter
- 3/4 cup pizza sauce
- 3 cups (12 ounces) shredded mozzarella cheese
- Any other toppings of your choice -- pepperoni, onions, green peppers, black olives, pineapple, oregano, etc.
- Optional: Parmesan cheese, for serving
Special Shrimp Salad

Directions Combine vinegar, salt, and chili powder in small bowl
- 2 1/4 tbsp white wine vinegar
- 1/2 tsp salt
- 1/2 tsp chili powder
- 3 tbsp extra virgin olive oil
- 3 C butterhead lettuce, torn into pieces
- 2 grapefruit, cut into segments
- 2 avocados, peeled and sliced
- 10 oz precooked shrimp
- 1 scallion, including top, thinly sliced
- 4 tsp chopped cilantro
- Combine vinegar, salt, and chili powder in small bowl. Whisk in oil. Put lettuce on serving plate or 4 individual salad plates. Arrange grapefruit, avocado, and shrimp over lettuce. Sprinkle with scallion and cilantro. Drizzle salads with chili dressing.
Heavenly Potatoes and Ham

Directions Preheat oven to 350 degrees F (175 degrees C)
- 5 pounds red potatoes, quartered
- 1 (16 ounce) container sour cream
- 1/2 cup butter
- 1 (10.75 ounce) can condensed cream of chicken soup
- 2 cups shredded Cheddar cheese
- 1/4 cup chopped green onion
- 2 cups cooked, chopped ham
- salt and pepper to taste
- 1 1/2 cups Parmesan cheese flavored bread crumbs
- 1/4 cup melted butter
Sweet Potato Quesadillas

ONE: In large non-stick skillet, heat olive oil
- 1 1/2 cups finely chopped onions
- 2 garlic cloves, minced
- 3 Tbsp olive oil
- 4 cups peeled sweet potatoes, grated
- 1/2 tsp dried oregano
- 1 tsp chili powder
- 1 Tbsp ground cumin
- 1-2 pinches cayenne (I leave this out because I’m wimpy)
- salt and pepper
- 1 cup shredded sharp cheddar cheese
- 1 can of black beans, drained
- 8 8-inch whole wheat tortillas
Southwest Goulash

Cook macaroni according to package directions
- 1 cup uncooked elbow macaroni
- 1 pound lean ground beef (90% lean)
- 1 medium onion, chopped
- 1 can (28 ounces) diced tomatoes, undrained
- 2/3 cup frozen corn
- 1 can (8 ounces) tomato sauce
- 1 can (4 ounces) chopped green chilies
- 1/2 teaspoon ground cumin
- 1/2 teaspoon pepper
- 1/4 teaspoon salt
- 1/4 cup minced fresh cilantro
Hot Chicken Sandwich

Classic Homemade Cinnamon Raisin Biscuits

1. Cut butter into flour, baking powder, salt, and cinnamon
- Yield:
- Traditional homemade glazed wheat biscuits with cinnamon and raisins
- 2 dozen biscuits
- Ingredients:
- 1 cup whole wheat flour
- 1 cup white flour
- 4 tsp. baking powder
- 1 tsp. salt
- 1 tsp. cinnamon
- 3/4 cup butter
- 1/2-1 cup milk*
- 1 cup raisins
- Icing or glaze, optional (see additional notes for two great recipes!)
Avocado Strawberry Spinach Salad with Poppy Seed Dressing

Toss all ingredients together with your desired amount of dressing until combined
- 6 cups fresh baby spinach
- 1 pint strawberries, hulled and sliced
- 1 avocado, diced (or you can double this to 2 avocados!)
- 4 ounces crumbled gorgonzola or blue cheese
- 1/4 cup sliced almonds, toasted
- half a small red onion, thinly sliced
- poppyseed dressing (recipe below)
- 1/2 cup avocado oil (or any oil, such as olive oil)
- 3 Tablespoons apple cider vinegar
- 2 Tbsp. honey
- 1 Tbsp. poppy seeds
- pinch of ground dry mustard (optional)
- salt and pepper
Beef Stroganoff

In a skillet over medium-low heat, cook mushrooms and onion in 4 tbs
- 8 ounces sliced mushrooms
- 3/4 cup to 1 cup sliced onions
- 6 tbs. butter, divided
- 1/4 cup flour
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1 to 1/2 lbs. round steak, about 1/2 inch thick, cut into strips
- 1 1/4 cups beef broth
- 1 tbs. Worcestershire Sauce
- 2 tbs. flour
- 1 cup sour cream
