- 2 2/3 cups butter cookie crumbs (about 1 1/2 [7.5-oz.] packages butter cookies)
- 1/3 cup butter, melted
- 1/4 cup powdered sugar
- 1/2 teaspoon almond extract
- 1 (14-oz.) can sweetened condensed milk
- 2 teaspoons lemon zest
- 1/2 cup fresh lemon juice
- 6 egg yolks
- 1 (8-oz.) container mascarpone cheese
- Toppings: fresh berries, sliced peaches or plums, fresh mint or thyme sprigs
Chocolate REESE'S Peanut Butter Cup Cupcakes with Chocolate Frosting

Use mini Reese's Peanut Butter for the cupcake, easy recipe for all to enjoy
- Frosting Ingredients:
- 1 package Duncan Hines Dark Chocolate Fudge Cake Mix
- 2 tablespoons Dutch process cocoa powder
- 1/2 cup creamy peanut butter
- 1-1/3 cups water
- 1/3 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 package REESE’S Peanut Butter Cups Miniatures
- Preheat over to 350 degrees. Line 24 cupcakes cups with paper liners sprayed with PAM. Place one Reese's Peanut Butter Cups Miniatures on the bottom of each paper liner.
- Then, place the cake mix, cocoa powder, peanut butter, water, vegetable oil, eggs, and vanilla in a large mixing bowl. Blend for 30 seconds on low, then increase speed to medium for 1 minute and 30 seconds.
- Spoon 1/3 cup of batter on top of each miniature peanut butter cup.
- 1 stick of butter (room temp)
- 1/2 cup shortening
- 4 cups confectioners sugar (sifted)
- 1 tsp vanilla
- 8 tbsp milk (may need a little more or less)
- 3/4 cup cocoa powder
- 1 cup peanut butter (creamy)
Booze Balls

Put chocolate in a microwave safe bowl and microwave on medium power for a minute
- 1 cup semisweet chocolate chips
- 20 chocolate wafer cookies (about 1/2 a 9-ounce box)
- 1/2 cup finely chopped pitted dried plums (about 15)
- 1/2 cup confectioners' sugar
- 1/4 cup bourbon or 1/3 to 1/2 cup brandy
- 1/4 cup sweetened condensed milk
- 1/4 cup granulated sugar, or colored decorating sugars, for garnish
White Truffles

Place the cream in a heat-proof bowl, and set the bowl over a pan of simmering water
- 2 tablespoons heavy cream
- 7 ounces good white chocolate, chopped
- 2 tablespoons Irish cream liqueur (recommended: Baileys)
- 1/2 teaspoon good vanilla extract
- 1/2 cup chopped hazelnuts
- 6 ounces bittersweet or dark chocolate, chopped
