Chocolate-Mint Thins

Directions 1. In a large bowl beat butter with an electric mixer on medium to high speed for 30 seconds
- 1 cup butter, softened
- 2/3 cup sugar
- 1 egg
- 2 teaspoons vanilla
- 2 1/2 cups all-purpose flour
- 2 tablespoons unsweetened cocoa powder or 1 ounce semisweet chocolate, melted and cooled
- 1 teaspoon mint extract
- Green food coloring
- 2 ounces dark chocolate, coarsely chopped (optional)
Baked Stuffed French Toast

Directions Butter bottom and sides of a 9-by-13-inch baking dish
- Unsalted butter, room temperature, for baking dish
- 1 14-inch loaf rustic bread, such as pane Pugliese, cut into 8 slices
- 8 thin slices ham, plus more for topping (optional)
- 8 ounces Gruyere, thinly sliced, plus more for topping (optional)
- 8 large eggs
- 2/3 cup whole milk
- Coarse salt and freshly ground pepper
- Pure maple syrup, such as Noble
Oatmeal Cupcakes to Go

Preheat oven to 380 F, and line 24-25 cupcake tins
- 5 cups rolled oats
- 2 1/2 cups over-ripe mashed banana, measured after mashing
- 1 tsp salt
- 5 tbsp liquid sweetener of choice–such as pure maple syrup or agave
- optional: 2/3 cup mini chocolate chips
- 2 1/3 cups water
- 1/4 cup plus 1 tbsp oil
- 2 1/2 tsp pure vanilla extract
- optional add-ins: cinnamon, shredded coconut, chopped walnuts, ground flax or wheat germ, raisins or other dried fruit, etc.
Vanilla Frozen Yogurt

Mix together the yogurt, sugar, and vanilla (if using)
- 3 cups (720g) strained yogurt (see below) or Greek-style yogurt
- 3/4 cup (150g) sugar
- 1 teaspoon vanilla extract (optional)
Simmered Pinto beans

- 1 pound (about 2 1/4 cups) pinto beans, washed and picked over for stones, soaked for at least 4 hours or overnight in 2 quarts water
- 1 medium onion, cut in half
- 2 to 4 large garlic cloves (to taste), minced
- 1 bay leaf
- Salt to taste (I think beans need a lot, at least 1 teaspoon per quart of water used)
Mediterranean Tuna Salad

Method: Put all ingredients into a large bowl and gently fold together until well combined
- 4 (6 ounce) cans albacore tuna, drained well
- 1 (14 ounce) can quartered artichoke hearts, drained
- 1/2 cup chopped red bell or piquillo peppers
- 3/4 cup sliced Greek olives
- 1/2 small red onion, finely chopped
- 1/4 cup chopped flat-leaf parsley
- 1/4 cup chopped basil
- 2 cloves garlic, finely chopped
- 1 teaspoon dried or 1 tablespoon chopped fresh oregano
- 1/2 cup mayonnaise
- 3 tablespoons lemon juice
- Salt and freshly ground pepper, to taste

A very easy and tasty soup that takes no time to make
- 4 cups low sodium chicken broth (use a good quality stock)
- 1/2 teaspoon soy sauce
- 1/2 cup cooked chicken breast, chopped
- 1/2 cup frozen green pea (baby peas are nice)
- 1/4 cup green onion, thinly sliced
- 1 egg, lightly beaten
