Tortilla Soup with Black Beans

Beans, a good-quality pantry staple, make this meal healthy, delicious, and affordable
- 1 tablespoon olive oil
- 4 garlic cloves, minced
- 1 teaspoon chili powder
- 2 cans (14 1/2 ounces each) diced tomatoes in juice
- 2 cans (15 ounces each) black beans, rinsed and drained
- 1 can (14 1/2 ounces) reduced-sodium chicken broth
- 1 package (10 ounces) frozen corn kernels
- Coarse salt and ground pepper
- 1 cup crushed tortilla chips, plus more for serving (optional)
- 1 tablespoon fresh lime juice, plus lime wedges for serving

Sweet Potato and Chipotle Soup

Directions In a large Dutch oven or heavy pot, heat 1 tablespoon oil over medium-high
- 2 tablespoons olive oil
- 1 medium white onion, chopped
- Coarse salt and ground pepper
- 2 teaspoons ground cumin
- 2 garlic cloves, minced
- 4 medium sweet potatoes (2 pounds total), peeled and cut
- 1/2 to 1 chipotle chile in adobo, chopped
- 7 cups low-sodium chicken broth
- Sour cream, for serving
- Toasted flour tortilla wedges, for serving (optional)
Peach Pancakes

Made with canned peaches! Recipe is thick so you have to flatten batter a bit in the pan
- 2 15oz. cans peach slices (juice pack)
- 1/2 cup whipping cream
- 2 eggs, lightly beaten
- 1 1/2 cup oat flour or whole wheat flour
- 1 cup all-purpose flour
- 1/3 cup packed dark brown sugar
- 2 tsp baking powder
- 1 1/4 tsp ground ginger
- 1 1/4 tsp ground cinnamon
Chile-Cheese corn muffins

1. preheat oven to 425. in a large bowl, whisk together the flour, baking powder, salt and cayenne
- 2 1/3 cup flour
- 1 T plus 2 tsp baking powder
- 1 tsp salt
- 1/2 tsp cayenne pepper
- 3/4 cup frozen corn, thawed
- one 4-oz can diced mild green chiles, drained
- 1/2 cup plus 1 T grated parmesan cheese
- 1 cup milk
- 1/2 cup mayonnaise
Slow-Cooker Pumpkin Butter | Spoonful

In a slow cooker, combine all ingredients
- 1 can of pumpkin puree
- 3/4 cup light brown sugar
- 1/2 cup apple juice
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
Sauteed Scallops over Spaghetti Squash

Heat oven to 375 degrees
- Two 1-pound spaghetti squash, cut in half lengthwise and seeded
- 2 tablespoons olive oil, plus more for baking pan
- 4 leeks, white and light-green parts only, thinly sliced lengthwise
- 2 medium shallots, peeled and thinly sliced lengthwise
- 1/4 cup all-purpose flour
- 10 large sea scallops, muscles removed, sliced in half
- Salt and freshly ground pepper
- 3/4 cup dry white wine (optional)
- 2 tablespoons unsalted butter, chilled and cut into small pieces
- 1 bunch minced chives

Heat oil in a large high-sided skillet or Dutch oven over medium heat
- 2 tablespoons extra-virgin olive oil
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 pound flaky white fish, such as haddock, tilapia or cod (see Tip), cut into 1 1/2-inch pieces
- 1 14-ounce can diced tomatoes
- 1 Anaheim or poblano chile pepper, chopped
- 1/4 cup packed chopped fresh cilantro
- 2 tablespoons sliced pimento-stuffed green olives
- 1 tablespoon capers, rinsed
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 cup water, as needed
- 1 avocado, chopped (optional)
Banana Muffins | Recipes | Spoonful

Heat the oven to 350 and grease and flour two regular-sized muffin tins
- 1 1/3 cups white flour
- 2/3 cup whole wheat flour
- 2 tablespoons wheat germ
- 3/4 cup sugar
- 3/4 teaspoon baking soda
- scant teaspoon kosher salt (or half as much table salt)
- 3-4 very ripe bananas, mashed (about 1 1/2 cups)
- 1/3 cup yogurt (we often use Stonyfield Farm Banilla, but any fruit flavor is good, as is vanilla)
- 2 large eggs, beaten lightly
- 6 tablespoons butter, melted and cooled
- 1 teaspoon vanilla extract
- 1 cup pecans, chopped coarse (raw is fine, but I like toasting them on a baking sheet at 350 until fragrant, 5-7 minutes)
