Savory Zucchini Cheddar Cheese Bread

Preheat oven to 350° F
- 1 cup whole wheat flour
- 1 cup all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 cups grated zucchini
- 1 1/2 cups grated cheddar cheese
- 1/4 cup chopped scallions (or chives)
- 3/4 cup buttermilk
- 2 large eggs
Corn Chowder

1 In a large saucepan, melt the butter over medium heat
- 1 Tbsp unsalted butter
- 1 strip of bacon or 1 teaspoon of bacon fat (substitute 1/2 Tbsp of butter for vegetarian option)
- 1/2 large yellow onion, chopped (about 1/2 cup)
- 1/2 large carrot, chopped (about 1/3 cup)
- 1/2 celery stalk, chopped (about 1/3 cup)
- 3 ears of sweet corn, kernels removed from the cobs (about 2 cups), cobs reserved (see steps for taking corn off the cob)
- 1 bay leaf
- 3 1/2 cups milk, whole or low fat
- 1 medium Yukon Gold potato, or Russet, peeled and diced
- 1/4 red bell pepper, chopped (about 1/4 cup)
- Kosher salt and fresh ground pepper
- 1/2 teaspoon fresh thyme leaves
Savory Grilled Tilapia

Combine all ingredients in a freezer bag
- 4-6 tilapia
- 1 tbsp european dipping oil- garlic
- 1 tsp rodeo rub
- 1/4 cup asian ginger plum dressing
- 1/2 tsp red pepper flakes
- 1 squirt honey

Heat the oven to 350º. Place the butter and milk for the batter in a small saucepan over medium heat

- 6 tablespoons (3/4 stick) butter

- 1/4 cup sunflower, sesame or flax seeds, or a combination (optional)

- 1 cup whole wheat flour
- 3/4 cup all-purpose flour
- 1/4 cup wheat germ
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, room temp
- 1/3 cup packed light brown sugar
- 2 large eggs
- 2 ripe bananas (1/2 lb each)
- 1/3 cup 2% milk
- 1 tsp vanilla extract
- 1 cup frozen blueberries.
