Watermelon Martinis

1. Place watermelon in Blender
- 5 cup watermelon cubes( rind and seeds removed)
- 3/4 cup lemon vodka
- 6 T lime juice
- 3 T cointreau or Triple Sec
- 3 T sugar
Blueberry Chicken Salad Vinaigrette Sandwiches

Slow-Cooker Beef and Barley Soup

A great winter meal served with crusty rolls and a tossed salad
- For topping:
- 1 oz dried wild mushrooms
- 1 cup boiling water
- 1 T veg oil
- 1 lb stew beef cut into 1/2 inch pieces
- 1/2 cup each, chopped: onions, celery, carrots
- 2 cloves garlic, chopped fine
- 1 tsp salt
- 1/2 tsp peppter
- 1/2 tsp dried thyme
- 1 bay leaf
- 1/2 cup pearl barley, rinsed
- 2 T tomato paste
- 6 cups beef broth
- Sour cream
- Dill, finely chopped
Summer Cantaloupe Grape Smoothie

Eat as a meal replacement; serves 2
- 2 cups spinach, fresh
- 1 cup of almond milk, unsweetened
- 1/2 cup of water
- 1/2 cantaloupe, ripe and rind removed
- 1 cup grape
- 2 tablespoons coconut oil
Rice Pudding

PLACE water rice and cinnamon stick pieces in small saucepan; bring to a boil
- 2 cups water
- 2 cups instant rice
- 1 cinnamon stick broken into pieces
- 1 (12 fl. oz.)can CARNATION evaporated Milk
- 1 (14 oz.) can CARNATION sweetened condensed milk
- 1/2 cup raisins
- 1 1/2 t vanilla extract1/4 teaspoon salt 2 large eggs slightly beaten
- 1 pinch ground cinnamon
Skillet Eggs with Leeks and Arugula

Directions In a large skillet, saute 2 thinly sliced leeks in 2 Tbsp butter until soft
- 2 thinly sliced leeks
- 2 tbsp butter
- finely chopped garlic clove
- pinch of salt
- 8 cups baby arugula
- 3 tbsp white wine
- 4 eggs
Pesto Tortellini with Scallops

HEAT oil in large nonstick skillet on medium heat
- 1 Tbsp. oil
- 3/4 lb. scallops
- 1 pkg. (9 oz.) DI GIORNO Three Cheese Tortellini
- 2 cups assorted cut-up vegetables (such as broccoli, red peppers and carrots)
- 1/2 cup DI GIORNO Basil Pesto Sauce
Whole Wheat Waffles

1) Preheat your iron while you make the waffle batter
- 1 1/2 cups King Arthur 100% White Whole Wheat Flour or Premium Whole Wheat Flour: 1
- 2 teaspoons baking powder: 1
- 1/2 teaspoon salt: 1
- 2 tablespoons sugar: 1
- 1 large egg: 1
- 1 1/2 cups lukewarm milk: 1
- 1/3 cup melted butter or vegetable oil: 1
Vegetable Lasagna

Directions 1. Cook lasagna noodles according to package directions
- 8 ounces dried lasagna noodles (9 or 10 noodles)
- 2 eggs, beaten
- 2 cups cream-style cottage cheese
- 1 15 ounce cartonricotta cheese
- 2 teaspoons dried Italian seasoning, crushed
- 2 cups sliced fresh mushrooms
- 1 cup chopped onion (1 large)
- 4 clovesgarlic, minced
- 2 tablespoons olive oil or cooking oil
- 2 tablespoons all-purpose flour
- 1/2 - 1 teaspoon black pepper
- 1 1/4 cups milk
- 1 10 ounce packagefrozen chopped spinach, thawed and thoroughly drained
- 1 10 ounce packagefrozen chopped broccoli, thawed and thoroughly drained
- 1 cup shredded carrot
- 3/4 cup shredded Parmesan cheese (3 ounces)
- 1 8 ounce package shredded mozzarella cheese (2 cups)
Crockpot Apple Cinnamon Pork Tenderloin

Cut slices in the pork tenderloin, about every inch, large enough to fit an apple slice
- 2 pound pork tenderloin, skin removed
- 2 apples, sliced
- 2 tablespoons cinnamon-sugar mix
- 1 cup red onion, sliced
- salt and pepper to taste
