1. Saute beef in oil in large pot until beef starts to brown

- 24 ounces of tomatoes; canned and diced
- 1 can red kidney beans
- 1 can white kidney beans

- 2 1/2 tsp. parsley; fresh chopped
- 3/4 tsp. tabasco sauce
- 24 ounces V8 juice
- 1/2 to 3/4 c. dry pasta shell macaroni; or other small pasta

Saute chicken pieces in olive oil until no longer pink, remove from pan and set aside
- 1 Tbls olive oil
- 1 3/4 pounds boneless, skinless chicken breasts, cut into 3/4-inch chunks
- 1 large onion, chopped
- 1 tablespoon minced raw garlic
- 1 large sweet potato, peeled and cubed
- Two 14.5-ounce cans diced tomatoes with lime juice and cilantro
- One 19-ounce can mild green or red enchilada sauce
- One 7-ounce can chopped green chilies
- Two 15-ounce cans black beans, rinsed and drained
- Two 14-ounce cans chicken broth
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup frozen corn
- 2 tsp cumin
- 1 tsp chipotle chili pepper powder
- 1 chicken bouillion cube

- 1 cup Old-Fashioned Whole Rolled Oats (not quick cook or instant)
- 1/4 cup Water (120-130F)

- 3 TBSP Coconut Oil, melted (canola or vegetable oil may be substituted)
- 2 TBSP Light Brown Sugar, packed

I came up with this one night when I was looking in the fridge and cabinets to come up with something for dinner
- 8 - 10 flour tortillas, burrito size
- 2 cups of cooked rice (leftovers work great here)
- 1 can refried beans, your choice
- 1 jar of salsa
- chopped onion (optional)
- chopped black olives (optional)
- 2 cups cheddar, shredded or 1 jar/can of cheese sauce
- 1 cup shredded, cooked chicken or beef, or cooked ground beef (optional)
