- 1 1/2 cups mashed ripe banana
- 2/3 cup sugar
- 1/4 cup milk
- 3 Tbls vegetable oil
- 1/2 tsp vanilla
- 3 eggs
- 2 2/3 cups Bisquick Brand Baking Mix
Grilled Chicken Thighs with Brazilian Vinaigrette Salsa

- For the Vinaigrette Salsa:
- Ingredients
- 8 garlic cloves, peeled
- 8 boneless skin on chicken thighs
- 6 tablespoons melted butter
- 2 teaspoons coarse sea salt
- 1 teaspoon ground bay leaf
- Vinaigrette Salsa, recipe follows
- 1 cup peeled, seeded and 1/4-inch diced tomato
- 1/2 cup 1/4-inch diced red bell pepper
- 1/2 cup 1/4-inch diced green bell pepper
- 3 tablespoons white wine vinegar
- 3 to 4 tablespoons olive oil
- Salt and freshly ground black pepper
- Combine all ingredients in a medium bowl and stir well to combine. Allow to sit at room temperature for at least 1 hour before serving.
- Yield: 2 cups

Gumbo

- 3 large boneless skinless chicken breast halves
- Salt and pepper
- 1/4 cup vegetable oil
- 1 pound smoked sausage, cut into 1/4-inch slices
- 1/2 cup all-purpose flour
- 5 tablespoons margarine
- 1 large onion, chopped
- 8 cloves garlic minced
- 1 green bell pepper, seeded and chopped
- 3 stalks celery chopped
- 1/4 cup Worcestershire sauce
- 1/4 bunch flat leaf parsley, stems and leaves, coarsely chopped, plus chopped leaves for garnish
- 4 cups hot water
- 5 beef bouillon cubes
- 1 (14-ounce can) stewed tomatoes with juice
- 2 cups frozen sliced okra
- 4 green onions, sliced, white and green parts
- 1/2 pound small shrimp, peeled, deveined and cooked
Roasted Chicken Thighs w/Zucchini and Feta

Low carb and nutritous
- 2.5 lbs skinless chicken thighs, rinsed and patted dry
- 2 medium zucchini, cut into 1" chunks
- 2 Tbls extra-virgin olive oil
- 2 garlic cloves, minced
- 2 tsps dried oregano
- 3/4 tsp salt
- 1/2 tsp freshly ground black pepper
- Finely grated zest of 1 lemon
- 1/2 cup crumbled feta cheese
Steamed Conch

In large skillet, fry vegetables in butter for 2 minutes
- 3 conch, split and pounded
- 2 Tbls butter
- 1 onion, sliced
- 1 green pepper, sliced
- 1 celery stalk, diced
- 1 15oz can diced tomatoes
- 1 sm can tomato paste
- salt and pepper
- dash worcestershire sauce
- 2 Tbls ketchup
- thyme
- hot pepper sauce

- 1/8 tsp nutmeg

- 2 tsp warm water
- 1/4 tsp vanilla

- 6 cups water
- 1 cup red lentils
- 1 (15 ounce) can garbanzo beans, drained
- 1 (19 ounce) can cannellini beans
- 1 (14.5 ounce) can diced tomatoes
- 1/2 cup diced carrots
- 1/2 cup chopped celery
- 1 teaspoon garam masala
- 1 1/2 teaspoons ground cardamom
- 1/2 teaspoon ground cayenne pepper
- 1/2 teaspoon ground cumin
- 1 tablespoon olive oil
