Cheesy Amish Breakfast Casserole

1. Preheat oven to 350 degrees F (175 degrees C)
- 1 pound sliced bacon, diced
- 1 sweet onion, chopped
- 4 cups frozen shredded hash brown potatoes, thawed
- 9 eggs, lightly beaten
- 2 cups shredded Cheddar cheese
- 1 1/2 cups small curd cottage cheese
- 1 1/4 cups shredded Swiss cheese
Baked Bean Casserole

1. Brown meat with onion. Drain
- 1 lb. ground beef
- 1/2 lb. bacon, cooked & cut up
- 1 onion
- 1 1/2 C. brown sugar
- 1 tsp. dry mustard
- 1 T worcestershire sauce
- 1 lg. can pork & beans
- 1 can lima beans, drained
- 1 can kidney beans, drained
- 1 can butter beans, drained
- 3/4 C. catsup
- 1 tsp vinegar
Tuxedo Brownie Cups

1. Preheat oven to 325°F (160°C)
- Nonstick cooking spray with flour
- 1 pkg (18-21 oz or 450 g) fudge brownie mix (plus ingredients to make cake-like brownies)
- 2 square (1 oz/30 g) white chocolate for baking
- 2 tbsp (30 mL) milk
- 8 oz (250 g) cream cheese, softened
- 1/4 cup (50 mL) powdered sugar
- 1 cup (250 mL) thawed, frozen whipped topping
- 1 pint small strawberries, sliced

Preheat oven to 500 degrees
- 2 medium tomatoes, sliced
- 2 medium zucchini, sliced
- 12 oz. ground beef
- 1 large onion, finely chopped
- 2 medium garlic cloves, minced
- 1 C. canned tomato sauce
- 2 C. cottage cheese
- 1 large egg yolk
- 1/2 C. shredded cheddar cheese
- 1 T. parsley or oregano
- 1/8 tsp. salt and pepper
Chicken and Ravioli Carbonara

1. In 10-inch skillet, heat dressing over high heat
- 2 tablespoons Italian dressing
- 1 lb boneless skinless chicken breasts, cut into 1/2-inch strips
- 3/4 cup Progresso® chicken broth (from 32-oz carton)
- 1 package (9 oz) refrigerated cheese-filled ravioli
- 1/2 cup half-and-half
- 4 slices bacon, crisply cooked and crumbled
- Shredded Parmesan cheese, if desired
- Chopped fresh parsley, if desired

In large mixing bowl, blend together eggs, sugars, oil, and vanilla
- 3 eggs
- 1 1/2 C. sugar
- 1/2 C. brown sugar
- 1 C. oil
- 1 tsp. vanilla

- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 C. grated zucchini
- 1 1/2 tsp. cinnamon
- dash of nutmeg
- 1/2 C. walnuts
Mushroom and Spinach Bowtie Pasta

Place dried mushrooms in a medium bowl and cover with 1 C
- 1/2 oz. dried mushrooms
- 1 cup boiling water
- 8 oz. uncooked bowtie pasta
- 2 tsp. olive oil
- 2 C. cremini mushrooms, sliced
- 1 T. cornstarch
- 1/4 C. cold water
- 1/8 tsp. salt and pepper
- 5 C. baby spinach leaves
- 2 T. grated Parmesan cheese
- 2 medium garlic cloves, minced
- 2 T. pine nuts, lightly toasted

- 4-5 cups fruity pebbles

- 6 cups rice krispies cereal
- 1/4 cup sprinkles, more if desired
