1. Cut chicken into 1-inch pieces
- 8 boneless, skinless chicken (1 1/2#)
- 1 T. vegetable oil
- 2 medium carrots, sliced (1 C.)
- 2 medium stalks celery, chopped (1 C.)
- 1 medium onion, chopped (1/2 C.)
- 2 cloves garlic, finely chopped
- 1 C. chicken broth
- 2 T. soy sauce
- 2 T. cornstarch
- 3 T. cold water
- 1 C. broccoli
- 1 C. snow pea pods
- 6 C. chow mein nooodles

- 1/2 C. brown sugar

- 1/4 C. flour
- 1/3 C. dill pickle liquid
- 1/3 C. milk
- 1/2 C. chopped dill pickle

Southwest Taco Pie

- Crust:
- 1/4 C. plus 1 T. cornmeal, divided
- 3/4 C. all-purpose flour
- 1 1/2 tsp. baking powder

- 1 # ground beef
- 1 C. chunky salsa

- 1/3 C. all-purpose flour
- Dash of salt
- 2 1/2 C. fat-free milk
- 1 (14-oz) can fat-free sweetened condensed milk
- 2 egg yolks, lightly beaten

- 3 C. sliced ripe bananas
- 48 reduced-fat vanilla wafers
Greek Lemon Chicken Soup

- 2 C. chicken, cooked & chopped
- 2 med. carrots, chopped
- 1/2 C. onion, chopped
- 1-2 lemons
- 2 T. snipped fresh parsley
- 2/3 C. uncooked long-grain white rice
- 1 garlic clove, pressed
- 1 can (10 3/4 oz) condensed cream of chicken soup
- 3 cans (14 1/2 oz each) chicken broth
- 1/4 tsp. pepper

- 1 # uncooked boneless, skinless chicken strips
- 1/2 medium sweet red pepper, sliced
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 4 hoagie buns
- 4 slices cheese
Apple Raspberry Pie

1. Preheat oven to 400°F
- 1 package (15 ounces) refrigerated pie crusts (2 crusts)
- 1-1 1/4 cups sugar
- 1/3 cup cornstarch
- 1/2 teaspoon ground cinnamon
- 5 medium baking apples such as Braeburn, peeled, cored and sliced (about 5 cups slices)
- 1 cup frozen sweetened raspberries (not in syrup)
- 1 egg
- 1 tablespoon water
- Vanilla ice cream (optional)
Crock Pot Ziti

This slow cooked Ziti is actually made completely in the crockpot
- 1 (1 pound 7.8-ounces) jar marinara (no sugar added) look for sauce with the fewest ingredients
- 3 cups penne shells (whole grain, dry)
- 2 cups fat free cottage cheese
- 2 cups skim mozzarella cheese, shredded
- 1 large zucchini (1/4-inch slices)
- 1 tablespoon fresh oregano (finely chopped)
- 1 tablespoon fresh basil (finely chopped)
