Make the taco seasoning: Mix all of the ingredients with 1 tablespoon each salt and black pepper in a bowl
- For the Taco Seasoning:
- 2 tablespoons onion powder
- 2 tablespoons garlic powder
- 1 tablespoon chili powder
- 1 teaspoon dried oregano
- 1 teaspoon cayenne pepper
- 1 teaspoon ground cumin
- Kosher salt and freshly ground black pepper
- For the Pizzas:
- 1/4 cup canola oil, plus more for brushing
- 1 pound skinless, boneless chicken breasts
- 1 16-ounce tube pizza dough
- All-purpose flour, for dusting
- 1 cup shredded mozzarella
- 1 cup shredded sharp cheddar

- the cupcake:
- 1 cup flour
- 1/4 cup cocoa powder
- 3 Tablespoons black cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup plain rice or soymilk
- 1/4 cup canola oil
- 1/2 cup maple syrup
- 1/4 cup sugar
- 1 teaspoon apple cider vinegar
- 1 teaspoon vanilla extract
- mint icing:
- 1/4 cup non hydrogenated shortening
- 3 cups powdered sugar
- 1/4 cup plus 1 Tablespoon soy creamer or soymilk
- 1 1/2 teaspoons mint extract
- 1/2 teaspoon vanilla extract
- 1 drop green food coloring
- ganache (you may want to halve or third this amount, depending on how much you want to use):
- 3 Tablespoons soycreamer or soymilk
- 1/3 semisweet chocolate chips

- Chicken Skewers
- 2 tsp olive oil
- 1 Tbsp lemon juice
- 1 tsp dried oregano
