Smoked Brisket

One hour before you want to get the brisket into the smoker, apply the rub to the brisket
- For the rub:
- One 12- to 14-pound brisket, trimmed (ask the butcher to trim the brisket for you if you're not sure how)
- 1/2 Cup brisket rub (see below)
- Shaker bottle (optional)
- Spray bottle filled with water
- Aluminum foil
- Meat thermometer
- Seasoned firewood chunks (oak, hickory, pecan or apple) or charcoal with chimney
- 1/4 Cup Morton brand kosher salt (or any kosher salt)
- 1/4 Cup 16-mesh black pepper
Queso con Carne

Cook sausage until no longer pink
- OR:
- 1 lb breakfast sausage
- 1 lb Velveeta, cubed
- 1/4 Cup milk
- 10 ounce can tomatoes with green chiles (Rotel) or chunky salsa
- 1 lb ground beef (or turkey)
- 1 lb Velveeta, cubed
- 1/4 Cup milk
- 1 pkg taco seasoning
- 10 ounce can tomatoes with green chiles (Rotel) or chunky salsa
Cabbage & Sausage

Cook bacon and onion until onion is translucent
- 1 TBS bacon grease
- 1/2 onion (diced)
- 1 head cabbage (diced)
- 2 cups chicken broth
- 2 carrots (peeled and sliced)
- 1 pkg Polska kielbasa (sliced)
Left-Over Pot Roast Casserole

Preheat oven to 400 degrees
- 1 pkg mushroom gravy mix
- 3/4 cup water
- 2 cups leftover pot roast (cubed)
- 16 oz bag frozen mixed vegetables
- leftover potatoes and carrots from pot roast
- 1 12oz tube buttermilk biscuits
Goulash

Preheat oven to 350° Grease 9x13 baking dish
- 16 oz pasta
- 1 lb ground beef (or turkey)
- 1 green bell pepper (chopped)
- 1 onion (chopped)
- 1 tsp minced garlic
- 14.5 oz can diced tomatoes
- 2 TBS chili powder
- 1 cup water
- 12 oz peas
- 12 oz corn
- 8 oz mushrooms (diced)
- salt and pepper to taste
- 4 oz grated cheese
Goulash

Prepare noodles as directed; drain
- 16 oz elbow macaroni or small shells (uncooked)
- 1 lb ground beef
- 1 small onion (diced)
- 1 green bell hepper (diced)
- 1 cup frozen corn*
- 1 cup frozen peas*
- 1 26oz jar spaghetti sauce
- 1/4 cup red wine OR water
- 1 tbs dried parsley
- 1 tsp salt
- 1 tsp pepper
French Onion Soup (Condensed)

Makes equivalent to 10 3/4 oz can condensed soup
- 1/2 cup onion (finely diced)
- 1 TBS olive oil
- 1 TBS molasses
- 3/4 cup beef stock (or broth)
- 2 TBS Worcestershire sauce
- 1 tsp onion powder
- 1 tsp salt
- 2 TBS corn starch
- 1/4 cup cold water
Marinara Sauce

Heat olive oil in saucepan
- 2 TBS olive oil
- 1/2 cup (3 oz) yellow onion (diced)
- 1/2 cup (3 oz) green bell pepper (diced)
- 1 tsp minced garlic
- 28 oz can crushed tomatoes
- 1/4 cup red wine
- 1 TBS dried parsley
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp sugar
- 1 tsp salt
- 1/2 tsp black pepper
Baked Pork Chops

Preheat oven to 350 degrees
- 6 thick cut pork chops
- 2-3 tsp garlic salt
- 1-2 tsp black pepper
- 2 eggs (beaten)
- 1/4 cup all purpose flour
- 2 cups Italian seasoned bread crumbs
- 4 tbs olive oil
- 1 10.75 can cream of mushroom soup
- 1/2 milk
- 1/3 cup white wine
- 1 tsp Italian seasoning
