In large stockpot, prepare pasta al dente
- 16 oz elbow macaroni or shells
- 1 stick unsalted butter
- 8 oz Velveeta (cubed)
- 4 oz sharp cheddar (shredded)
- 1 cup milk
- salt & pepper to taste

Meatloaf

Preheat oven to 350 degrees
- 1-2 lb ground beef
- 1 egg
- 3 - 4 slices bread (diced)
- 1/4 cup milk
- 1 TBS butter
- 1/2 medium onion (diced)
- 1/2 green bell pepper (diced)
- 1 stalk celery (finely diced)
- 1 TBS ketchup
- 1 TBS yellow mustard
- 1 TBS Worcestershire sauce
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp oregano
- 1/2 tsp onion powder
- 1/4 tsp chili powder

- Sauce:
- 1 large eggplant
- 1/2 cup all-purpose flour
- 2 eggs
- 1/2 cup Italian bread crumbs
- 8 slices thin-cut provolone
- 1/4 cup canola oil (for frying)
- 2 TBS olive oil
- 1/2 cup (3 oz) yellow onion (diced)
- 1/2 cup (3 oz) green bell pepper (diced)
- 1 tsp minced garlic
- 28 oz can crushed tomatoes
- 1/4 cup red wine
- 1 TBS dried parsley
- 1 tsp dried basil
- 1 tsp dried oregano

- 3/4 cup all purpose flour

- 1/3 cup rice vinegar
- 2 1/2 TBS soy sauce
- 6-10 skin of orange with vegetable peeler (about 6-10 slices) *zest
- 1/4 cup brown sugar
- 1/4 tsp allspice
- 1/2 tsp minced garlic
- 2 green onions (sliced)
- 1/4 tsp red pepper flakes (3-4 dried whole red chilies
- 2 TBS corn starch
- 3 TBS water

- 1/4 cup chopped onion
- 1/4 cup chopped celery
- 1/4 cup butter
- 2-3 tbs cooking Sherry
- 4 chicken breasts, cubed
- 16 oz broccoli florets, thawed
- 10.75 oz cream of mushroom soup
- 10.75 oz cream of chicken soup
- 1 cup cooked rice
- 1/2 cup shredded mozzarella
