Yellow Squash & Bacon

In large skillet, fry bacon pieces over medium-high heat until crisp
- 4-6 yellow squash (sliced 1/4 inch thick)
- 5 slices of bacon (cut into 1 inch pieces)
- 1/4 cup water
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
Chicken Parmesan

In saucepan, heat olive oil
- Sauce:
- 4 chicken breasts
- 1/2 cup Italian bread crumbs
- 1/4 cup Parmesan cheese
- 2 eggs
- 1/4 cup canola oil (for frying)
- 4-6 slices thin-cut mozzarella
- 2 TBS olive oil
- 1/2 cup (3 oz) yellow onion (diced)
- 1/2 cup (3 oz) green bell pepper (diced)
- 1 tsp minced garlic
- 28 oz can crushed tomatoes
- 1/4 cup red wine
- 1 TBS dried parsley
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp sugar
- 1 tsp salt
- 1/2 tsp black pepper
Macaroni Salad

Prepare macaroni as directed
- 8-12 oz elbow macaroni
- 1 cup Hellman's mayonnaise
- 2 TBS white vinegar
- 1 TBS Dijon mustard
- 1 tsp sugar
- 1 tsp salt
- 1/4 tsp black pepper
- 1 cup celery (finely diced)
- 1 cup red bell pepper (finely diced)
- 1/4 cup red onion (finely diced)
Potato Salad

Peel and dice potatoes into large chunks
- 4 potatoes
- 2 eggs
- 1/2 cup sweet pickle relish
- 1/8 tsp garlic salt
- 1/8 tsp celery flakes
- 2 TBS yellow mustard
- 1/4 tsp black pepper
- 1/2 cup mayonnaise
Beef Stew

Put meat in crock pot. Sprinkle flour, salt, and pepper over meat
- 2 - 3 lb stew meat
- 1/4 cup all purpose flour
- 1 tsp salt
- 1 tsp pepper
- 2 cups water
- 1 beef bouillon cube
- 1 tsp Worcestershire sauce
- 1 yellow onion (diced)
- 8 baby carrots (cut length-wise)
- 3 russet potatoes (peeled and diced)
- 1 stalk celery (diced)
- 1 bay leaf
Peanut Butter Blossom Cookies

Preheat oven to 375 degrees
- 1/2 cup granulated sugar
- 1/2 cup brown sugar (packed)
- 1/2 creamy peanut butter
- 1/2 cup butter (softened)
- 1 egg
- 1 tsp vanilla extract
- 1 1/2 cup all-purpose flour
- 1/2 tsp baking powder
- 3/4 tsp baking soda
- 36 Hershey Kisses (unwrapped)
Pasta Primavera

Pour tomato sauce into medium saucepan
- 16 oz cavatappi pasta
- 12-16 oz California veggies (broccoli, cauliflower, carrots)
- 29 oz tomato sauce
- 1/4 cup red wine
- 1 TBS parsley
- 2 tsp basil
- 1 tsp oregano
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp crushed rosemary
- Grated Parmesan (for topping)
Salmon Casserole

In a large skillet, melt the butter and saute the onion for about 5 minutes
- 2 tbs butter
- 1 large onion (diced)
- 1/2 tsp minced garlic
- 1 1/4 cups milk
- 1 8 oz pkg cream cheese (softened)
- 16 oz frozen mixed veggies
- 1 14.5 oz can whole new potatoes (drained and diced)
- 2 6 oz pouches skinless pink salmon
- 1/2 tsp salt
- 1/4 tsp pepper
- 8 oz package of crescent rolls
Tuna Mac

Mac & Cheese: In large stockpot, prepare pasta al dente
- Mac & Cheese:
- 1 12 oz can albacore tuna (or chunk light tuna (drained)
- OR 3 5 oz cans
- 16 oz elbow macaroni or shells
- 1 stick unsalted butter
- 8 oz Velveeta (cubed)
- 4 oz sharp cheddar (shredded)
- 1 cup milk (or unsweetened almond milk)
- salt & pepper to taste
- 10.75 oz cream of mushroom soup
Ultra Chocolate Cheesecake

- Mocha Crumb Crust:
- 1 1/4 cups vanilla wafer crumbs (40 wafers)
- 1/4 cup sugar
- 1/4 cup unsweetened cocoa
- 1 tsp powdered instant coffee
- 1/4 cup butter, melted
- Cheesecake:
- 3 pkgs 8 oz cream cheese (softened)
- 1 1/4 cups sugar
- 1 8 oz sour cream
- 2 tsp vanilla extract
- 1/2 cup unsweetened cocoa
- 2 tbs all-purpose flour
- 3 eggs
- Chocolate Drizzle:
- 1/2 cup Semi-Sweet chocolate chips
- 2 tsp shortening
