Chop the garlic cloves and the red onions
- Optional:
- 2 TBSolive oil
- 8 small and ripe tomatoes (or use roughly double the amount cherry tomatoes)
- 2 red onions
- 2 garlic cloves
- ¼ cup raisins
- 8 TBS vinegar (white wine, or malt, for example)
- 2 TBS brown sugar
- 2 red chilli peppers
- 1 tsp pepper
- 3 cardamom seeds
- 1 tsp paprika
- 1 handful basil, fresh
Crawfish Monica

Melt butter in large skillet
- 1 yellow onion (chopped)
- 1 yellow bell pepper (chopped)
- 4 cloves garlic (chopped)
- bunch of green onions (chopped)
- 1 stick butter
- 1 lb crawfish tails
- 1 tsp salt (to water)
- 1 lb rotini pasta
- 1 pint heavy cream
- 1/2 tsp salt
- 1/2 TBS Cajun seasoning
- 1/4 tsp cayenne pepper
- ----
- 1 pound linguine, fettucine, or rotini
- 2 tablespoons olive oil
- 6 tablespoons unsalted butter
- 1 cup chopped yellow onions
- 2 tablespoons minced garlic
- 2 teaspoons Essence, recipe follows
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/4 cup dry white wine
- 2 cups heavy cream
- 1 tablespoon fresh lemon juice
- 1 pound crawfish tails*
- 1/2 cup chopped green onions
- 1/2 cup chopped fresh parsley leaves
- 1 cup grated Parmesan cheese
- *Serve with garlic toast
Mocha Crumb Crust

Preheat oven to 350 degrees
- 40 vanilla wafers
- 1/4 cup sugar
- 1/4 cup cocoa
- 1 tsp instant coffee
- 1/3 cup melted butter
Bananas Foster

In a large skillet, melt butter over medium-low heat
- 1 stick butter
- 1/2 cup brown sugar (packed)
- 1 tsp vanilla
- 1/4 tsp cinnamon
- 3 bananas (peeled, halved, and cut lengthwise)
- 1/4 cup Myers's dark rum
- vanilla ice cream
Blueberry Muffins

Preheat oven to 400 degrees
- 1 1/2 cups all-purpose flour
- 1 tbs baking powder
- 1/2 tsp salt
- 1/4 cup sugar
- 4 tbs unsalted butter (melted & cooled)
- 1 large egg
- 7 oz milk
- 1 cup fresh blueberries (or any fruit)
Beef Cabbage Stew

Heat oil in stock pot over medium heat
- 2 TBS olive oil
- 1 onion (diced)
- 1 lb ribeye (cut into one inch pieces)
- 1 stalk celery (diced)
- 2 carrots (peeled and diced)
- 1 head cabbage (chopped)
- 4 cloves garlic (2 tsp) (minced)
- 1/4 cup all purpose flour
- 6 cups beef stock/broth
- 3 tsp dried parsley
- 2 tsp thyme leaves
- 1 tsp basil
- 1 tsp oregano
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 TBS salt (more to taste)
- black pepper to taste
Fideos

Do stuff with the things.
- 3 1/2 cups vegetable oil (for frying)
- 16 oz fideos
- 2 TBS extra-virgin olive oil
- 16 oz boneless skinless chicken thighs (1/2 in pieces)
- Kosher salt
- 1 TBS minced garlic
- 3 oz Spanish chorizo
- 1/2 cup white wine
- 5 cups chicken stock (chicken base - see recipe)
Pico de Gallo

Mix tomato, jalapeno, and onion in mixing bowl
- 3 Roma tomatoes (seeded, diced)
- 1 jalapeno (seeded, minced)
- 1/2 white or red onion (minced)
- 2 TBS chopped cilantro
- 1 clove garlic (minced)
- juice of quarter of lime
- salt & pepper to taste
"Heinz" Ketchup

Combine all ingredients in a medium saucepan over medium heat
- 6 oz tomato paste
- 1/2 cup light corn syrup
- 1/2 white vinegar
- 1/4 cup water
- 1 TBS sugar
- 1 tsp salt
- 1/4 tsp onion powder
- 1/8 tsp garlic powder
Sazon Goya con Culantro y Achiote (Coriander and Annato)

Use equal parts of each in food processor
- 1 TBS salt (sea salt optional)
- 1 TBS garlic powder
- 1 TBS culantro (coriander)
- 1 TBS ground cumin
- 1 TBS oregano
- 1 TBS annato (achiote)
- 1 TBS yeast flakes (optional)
