Preheat oven to 350 degrees
- 1 cream of mushroom soup (see recipe)
- 8 oz cream cheese
- 4 TBS butter, divided
- 1 onion, diced
- 2 ribs celery, diced
- 1 green bell pepper, diced
- 1 lb medium shrimp (peeled and deveined)
- 1 lb crawfish tails (drained)
- 1 cream of mushroom soup (see recipe)
- 1/2 cup uncooked rice
- 4 oz mushrooms (diced)
- 1 tsp garlic salt
- 3/4 tsp Louisiana sauce
- 3/4 cup shredded cheddar
- 1/2 cup fried onions
Chicken Sabroso

Preheat oven to 400 degrees
- 2 cups dry small elbow macaroni
- 2 tbs butter
- 2.8 oz can fried onions (divided)
- 1/3 cup red bell pepper (diced)
- 1/3 cup yellow bell pepper (diced)
- 1/3 cup orange bell pepper (diced)
- 2 tsp minced garlic
- 1 can (10 oz) chicken
- 1/2 loaf Velveeta (cubed)
- 1 cup milk
Texas Chili

Heat bacon drippings in a heavy-bottomed stockpot and saute onions, peppers, celery and garlic until softened
- 1 TBS bacon drippings
- 3 medium yellow onions, diced
- 3 stalks celery, chopped
- 1 green bell pepper, chopped
- 2 serranos or jalapeños, stems and seeds removed (wear rubber gloves)
- 3 lb ground beef (or turkey, deer, etc...)
- 4 garlic cloves, minced
- 12-ounce can beer (choose a hardy beer like Texas favorite Shiner Bock)
- 8-ounce can tomato sauce
- 4 TBS chili powder
- 1 TBS ground cumin
- 1 TBS dried oregano
- 1 large bay leaf
- 1 tsp dry mustard
- 2 cups beef stock
- Salt and pepper to taste
Shrimp Scampi Bake

Cook pasta to al dente. Drain
- 16 oz Fideo (or thin cut spaghetti)
- 2 lb medium shrimp (peeled and deveined)
- 2 TBS olive oil
- 2 cups chardonnay wine
- Juice from 1 lemon
- 2 tsp Italian seasoning
- 1/2 cup butter
- 1 TBS parsley
- 1 cup grated Parmesan
- 1/4 cup Italian bread crumbs
Curry Chicken & Chick Peas with Rice

Pt chicken dry with paper towel
- 4 boneless chicken thighs
- 2 tsp vadouvan curry powder
- 2 TBS olive oil (divided)
- 3 green onions (sliced and separated)
- 1 cup jasmine rice
- 1 tsp cumin
- 2 cups water
- 2 zucchini (quartered)
- 15 oz can chick peas (drained and rinsed)
- 1 orange bell pepper (thinly sliced)
- 1/4 cup golden raisins
- 1 lime (juiced)
White / Cheese Sauce

In a small saucepan, combine corn starch and milk
- 1 TBS corn starch
- 1 cup milk
- 2 TBS butter
- 1/4 tsp salt
- 1/8 tsp pepper
Ham Divan

In a stockpot cook noodles according to directions; drain
- Soup:
- 8 oz rotini pasta
- 12 oz can evaporated milk
- 2 TBS vegetable oil
- 1 tsp onion powder
- 2 TBS corn starch
- 1/4 tsp salt
- 1/8 tsp white pepper
- 1/8 tsp sugar
- 1-2 TBS finely chopped mushrooms
- 1/4 cup milk
- 1 teaspoon Dijon mustard
- 1/2 teaspoon Worcestershire sauce
- 1/8 tsp black pepper
- 24 oz frozen broccoli cuts
- 12 - 16 oz cooked ham
- 1/4 cup french-fried onions (optional)
- 4 oz shredded cheddar cheese
Beef & Veggie Stir Fry

Slice steak into thin strips
- Meat:
- 1 lb sirloin tip steak (thin)
- 2 tbs olive oil
- 1/2 yellow onion (diced)
- 1/2 green bell pepper (diced)
- 1 sprig celery (diced)
- 1 tsp minced garlic
- Sauce:
- 2 cups water
- 1 beef bouillon cube
- 2 tbs corn starch
- 1 tbs brown sugar
- 2 tbs soy sauce
- 1 tbs sesame oil
- 1/4 tsp garlic powder
- 1/4 tsp allspice
- Veggies:
- 1 16oz bag frozen stir-fry vegetables
- 1 tbs rice vinegar

In a medium bowl, mix together the flour, baking powder and salt
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1 tsp salt
- 2 tsp vegetable oil (or melted lard)
- 3/4 cups warm milk

- 2 tbs olive oil
- 2 lbs boneless chicken breast (cut into chunks)
- 2 tsp minced garlic
- 1 red bell pepper (sliced)
- 2 Roma tomatoes (diced)
- 3 cups minute rice
- 1 pkg Goya con saffron
- 1 tsp paprika
