Cashew Chicken

Add water and chicken bouillon in medium saucepan
- 2 cups water
- 1 chicken bouillon cube
- 1/4 cup corn starch
- 3 tbs soy sauce
- 1/2 tsp ground ginger
- 1 lb chicken breast (diced)
- 1 tsp minced garlic
- 1 rib celery (diced)
- 16 oz sugar snap pea stir fry
- 1 cup cashews
Pork Roast (Xmas Eve)

Grease inside of roasting pan or crock pot with cooking spray or butter
- Roast:
- 4 slices of bacon (cut into 1-inch pieces)
- 2-3 lb pork roast
- 2 tsp dried minced garlic
- 1 tsp dried rosemary
- 1/2 tsp ground sage
- 1/2 tsp salt
- 1/3 cup white wine
- Mushroom Gravy:
- 12 oz can evaporated milk
- 2 TBS vegetable oil
- 2 TBS corn starch
- 1 tsp onion powder
- 1/4 tsp salt
- 1/8 tsp white pepper
- pinch of sugar
- 2 small to medium mushrooms (finely chopped)
- 1/2 milk
- 1/3 cup white wine
Spanish Rice

In a large saucepan heat water and bouillon cube over high heat until cube dissolves
- 2 TBS vegetable oil
- 1/4 cup onion (minced)
- 1 1/2 cup rice
- 1 tsp minced garlic
- 2 1/2 cups water
- 1 chicken bouillon cube
- 1 8 oz can tomato sauce
Turkey & Cannellini Ragu

In large saucepan, heat quinoa and 1 1/2 cups of water to boiling
- 1 cup quinoa (or brown rice)
- 1 3/4 cups water (divided)
- 2 tsp extra virgin olive oil
- 1 lb ground turkey (93/7)
- 1/4 tsp salt and pepper
- 1 small onion (diced)
- 1 tsp oregano (2 tsp fresh)
- 1 15 oz can diced tomatoes (drained)
- 1/2 tsp minced garlic
- 1 15 oz can cannellini (white kidney) beans (rinsed and drained)
Apple Dumplings

Preheat oven to 350 degrees
- 2 large Granny Smith apples (peeled and cored)
- 2 10oz cans refrigerated crescent rolls
- 2 sticks butter
- 1 1/2 cups white sugar
- 1 tsp ground cinnamon
- 12 oz mountain dew (or diet)
Fried Cabbage

Cook bacon in large stockpot until crispy
- 6 slices bacon (diced)
- 1/2 onion (diced)
- 1 head cabbage (cut into 1-in pieces)
- 1 tsp salt
- 1 tsp ground black pepper

In large skillet cook beef until it is no longer pink; drain
- Sauce:
- 1 lb ground beef
- 1 26oz jar spaghetti sauce
- 1/4 cup red wine
- 1 tsp basil

- 1 8oz package lasagna noodles
- 16 oz ricotta cheese
- 8 oz shredded Italian blend cheese
- 8 oz Monterrey and cheddar cheese blend
- Garlic salt

Etouffee

Heat oil in skillet over medium heat
- 1/2 cup veg oil
- 1/2 cup flour
- 1 green bell pepper (diced)
- 1 onion (diced)
- 2 celery stalks (diced)
- OR 12 oz bag mirepoix
- 1/2 TBS minced garlic
- 14.5 oz can diced tomatoes
- 1-2 TBS Cajun season (Slap Ya Mama or Tony's)
- 2 cup chicken broth
- 2 lb crawfish meat
- 1 tsp kosher salt
- 1/4 tsp black pepper
- 2 tsp dried parsley flakes
- 2 TBS butter
- 2 cups cooked rice
Pork Chops L'Orange

In large skillet brown pork chops in oil and set aside
- 8 pork chops (or pork ribeyes)
- salt & pepper to taste
- 2 TBS vegetable oil
- 1 cup orange juice
- 3 TBS honey
- 2 tsp salt
- 3 TBS corn starch
- 1 tsp grated orange peel
Reese's Cookie Dough Pie

In medium mixing bowl, mix flour, baking soda, and salt
- Pie:
- 2 cups all purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 2/3 cup unsalted butter (softened)
- 1/2 cup peanut butter
- 1/3 cup sugar
- 2/3 cup brown sugar
- 1 large egg (room temperature)
- 1 tsp vanilla extract
- Cream cheese filling:
- 8 oz cream cheese (softened)
- 1/3 cup powdered sugar
- 1 egg (room temperature)
- 1/2 tsp vanilla extract
- Toppings:
- 1/3 cup mini chocolate chips
- 20-30 mini Reese's peanut butter cups (chopped & divided in half)
