Curried Chicken Corn Chowder

In a Dutch oven, heat butter over medium heat
- 1 tablespoon butter
- 2 medium onions, chopped
- 2 celery ribs, chopped
- 2 teaspoons curry powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Dash cayenne pepper
- 5 cups frozen corn (about 25 ounces)
- 3 cans (14-1/2 ounces each) reduced-sodium chicken broth
- 1/2 cup all-purpose flour
- 1/2 cup 2% milk or heavy whipping cream
- 3 cups cubed cooked chicken breast
- 1/3 cup minced fresh cilantro
CHICKEN PICCATA WITH ARTICHOKE HEARTS

pound chicken breasts flat dust w/ flour saute in butter or olive oil over med
- 8 boneless, skinless chicken breasts (pounded flat)
- 10 TBL butter or 6 TBL olive oil
- flour for dusting chicken breasts
- 1 C dry white wine
- 1/2 lemon (juice only)
- 2 TBL capers
- 8 artichoke hearts, quartered (packed in water)
- 1/2 C chicken stock (may use canned)
- 1/2 C half & half
- S & P to taste
Double Layer Pumpkin Cheesecake

Preheat oven to 325 degrees F (165 degrees C)
- 2 (8 ounce) packages cream cheese, softened
- 1/2 cup white sugar
- 1/2 teaspoon vanilla extract
- 2 eggs
- 1 (9 inch) prepared graham cracker crust
- 1/2 cup pumpkin puree
- 1/2 teaspoon ground cinnamon
- 1 pinch ground cloves
- 1 pinch ground nutmeg
- 1/2 cup frozen whipped topping, thawed
Butterscotch Pecan Dessert

in bowl, cut butter into flour until crumbly stir in 1/2 C pecans press into ungreased 12x9x2" baking pan
- 1/2 C cold butter
- 1 C flour
- 3/4 C chopped pecans, divided
- 1 pgk (8-oz) cream cheese, softened
- 1 C confectioners sugar
- 1 carton (8-oz) frozen whipped topping
- thawed, divided
- 3 1/2 C milk
- 2 pkgs (3.4 or 3.5-oz each) instant
- butterscotch or vanilla pudding mix
Peanut Noodle Salad

cook pasta - al dente reserve 3/4 C cooking water drain pasta & rinse w/ cold water until cool add sesame oil &
- 1 LB spaghetti or linguine
- 1 TBL salt
- 3 TBL toasted sesame oil
- 3/4 C chunky peanut butter
- 6 TBL soy sauce
- 3 TBL white vinegar
- 1 TBL hot sauce (mild)
- 1 cucumber, peeled, quartered lengthwise, seeded & sliced thin
- 1 red bell pepper, seeded & cut into 1/4" strips
- 1/3 C chopped fresh cilantro
Peanut Noodles

Cook pasta in a large pot of boiling water until done
- 8 ounces spaghetti
- 1 bunch green onions, sliced (white parts only)
- 2 tablespoons sesame oil
- 1 teaspoon minced fresh ginger root
- 1/3 cup peanut butter
- 1/4 cup soy sauce
- 1/4 cup hot water
- 1 tablespoon cider vinegar
- 1 teaspoon white sugar
- 1/4 teaspoon crushed red pepper flakes

- 1/4 C butter or marg
- 1 8oz carton sour cream
- 1 TBL chopped green onion

Peachy Keen Smoothies

puree all ingredients + 2C ice in blender until smooth, 2-3 min divide among glasses & sprinkle w/ more nutmeg
- 2 ripe peaches, halved, pitted & cut into chunks (with skin)
- 1 C 2% or 4% cottage cheese
- 1/4 C reduced fat milk
- 3-4 TBL honey
- 2 TBL fresh lemon juice
