- 1/2 cup butter, softened

- 1/4 cup plus 1tbsp maple syrup
- 1/2 cup almond butter

Chicken Zoneitorri

Lightly salt & pepper chicken pieces
- 20 oz. skinless boneless chicken breast
- olive oil or coconut oil
- 3 cloves garlic, chopped
- 2 cups green bell pepper, chopped (1 carb)
- 2 cups red bell pepper, chopped (1 carb)
- 1 1/2 cups onion, chopped (1 carb)
- 4 cups mushrooms, sliced (1 carb)
- 1 - 15 oz. can stewed tomatoes (2 carbs)
- 1/4 cup dry white wine (1/2 carb)
- 1 teaspoon italian seasoning

Spice-Rubbed Chicken with Roasted Onions

- 1 5 - 6 pound whole roasting chicken
- 1 teaspoon sugar

Savory Strawberry Salsa

This was very tasty. We served with grilled pork chops, would be great with any meat
- 2 cups strawberries, coarsely chopped
- 1 cup avocado, seeded, peeled, chopped
- 1/2 cup cucumber, coarsely choppes, seeded
- 2 tablespoons honey
- 1 teaspoon lime peel, finely shredded
- 2 tablespoons lime juice
- 1 to 2 tablespoons jalapeno chile pepper, seeded, finely chopped
- 1/4 teaspoon black pepper, coarsely cracked

- 4 oz. light cream cheese
- 1/2 cup sharp cheddar cheese
- 1/2 cup monterey jack with jalapeno cheese
- 1/2 cup shredded parmesan cheese
- 1/4 teaspoon cayenne
- 1 teaspoon fresh or dried chives
