Rosemary Roasted Loin of Pork

- 1 cup chopped fresh fennel and leaves
- 3 to 4 teaspoons snipped fresh rosemary
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons olive oil
- 3 pounds boneless pork top loin roast (double loin, tied)
- 2 sprigs fresh rosemary
- 1/2 cup carrot, chopped
- 1/2 cup coarsely chopped onion
- 1/4 cup chopped celery
- 2-1/2 cups reduced-sodium chicken broth
Smoked Turkey Salad with Oranges

- 1 5-oz. pkg. arugula or baby spinach
- 12 oz. smoked turkey or duck breast, sliced
- 1 medium red sweet pepper, cut in strips (1 cup)
- 1/4 cup fresh cilantro
- 1/2 cup peanut oil or canola oil
- 1/4 cup orange juice
- 1/4 cup honey
- 3 Tbsp. lemon juice
- 1 Tbsp. Dijon-style mustard
- 1 tsp. ground cumin
- 1/4 tsp. salt
- 1/4 tsp. ground black pepper
- 4 oranges, peeled and sectioned
Potato Frittata

- 1 lb Yukon gold or russet potatoes, scrubbed & thinly sliced
- 2 T olive oil
- 2 large carrots, thinly sliced
- 12 eggs
- 1/2 cup green onions (about 4) chopped
- 1/4 t each salt & ground black pepper
- 1/2 cup yellow cherry tomatoes, halved
- 1 clove garlic, minced
- Fresh snipped parsley and/or cilantro
4th of July Egg and Potato Salad

- 2 tablespoons coconut oil, melted
- 2 eggs, hard boiled and diced
- 1/4 white onion, finely chopped
- For the mayo
- 2/3 cup avocado oil
- 1 egg
- 1 teaspoon lemon juice
- 1 teaspoon dijon mustard
- 1/2 teaspoon dried parsley
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried basil
- salt and pepper, to taste
Tartar Sauce (Paleo)

- 1/2 T lemon juice or apple cider vinegar
- 1 T minced onion
- 1/4 t sea salt
- 1/4 t garlic powder
- 1/2 t dried dill
- 1/2 t raw honey (warmed if solid)
- 1/2 t pickle or sauerkraut juice (optional)
- sprinkle of parsley (optional)

- 3/4 cup whole kernel corn, thawed if frozen
- 3/4 cup chopped red sweet pepper
- 1/3 cup thinly sliced red onion
- 1/3 cup chopped cilantro
