Chicken Osso Bucco

- 12 medium chicken drumsticks (about 3 pounds)
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons olive oil
- 1 cup chopped carrot
- 1 cup chopped onion
- 1 cup chopped celery
- 6 cloves garlic, minced
- 2 tablespoons quick-cooking tapioca
- 1 8 ounce can tomato sauce
- 1/2 cup dry white wine or chicken broth
- 1/4 cup chicken broth
- 1 teaspoon finely shredded lemon peel
- 1 tablespoon lemon juice
- 1 teaspoon dried thyme, crushed
- 3 cups dried penne pasta
- Snipped fresh parsley (optional)
Spring Greens and Roasted Chicken

- 1 2-1/4-pound purchased roasted chicken, chilled
- 1 5-ounce package mixed spring greens (about 8 cups)
- 2 cups fresh sliced strawberries, or blueberries
- 4 ounces Gorgonzola or blue cheese, crumbled (1 cup)
- 1/2 cup honey-roasted cashews or peanuts
- 1 lemon, halved
- 3 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
Pork and Apricots with Mashed Sweet Potatoes

This was good. I had a smaller roast - only a little over 2 lbs - we cooked on high for 5 hours & it wasn't cooked...
- 2 1/2 pounds sweet potatoes, peeled and cut into 1-1/2-inch chunks
- 1 3 1/2 - 4 pound boneless pork shoulder roast
- 1 teaspoon dried tarragon, crushed
- 1 1/2 teaspoons fennel seeds, crushed
- 3 cloves garlic, minced
- 1 1/2 teaspoons salt
- 1 teaspoon freshly ground black pepper
- 2 tablespoons cooking oil
- 12 - 16 ounces kielbasa or other smoked sausage links, halved lengthwise and cut into 2-inch-long pieces
- 1 14 ounce can chicken broth
- 3/4 cup apricot nectar
- 1/2 cup dried apricots
- 4 teaspoons cornstarch
PB Chocolate Chocolate Chip Cookies

- 1 c almond flour
- 1 tsp vanilla extract
- 1/2 c chocolate chips (I usually use a blend of Ghiradelli chocolate chips, pecans, and walnuts)
- 2 tbsp honey (or your sweetener of choice, adjusted accordingly)
- 1/2 tsp baking soda
- 1 egg
- 1/2- 1 tbsp cocoa powder ( I use Hershey's special dark)
Ham-and-Asparagus-Stuffed Chicken

- 1 c diced cooked ham, rind removed
- 2 T mayonnaise
- 1 T finely chopped onion
- 1 T snipped fresh tarragon or parsley
- 1 t Worcestershire sauce
- 1 t cider vinegar
- 1 t Dijon-style or whole-grain mustard
- 1/8 t cayenne pepper
- 4 large skinless, boneless chicken breast halves (about 2 lb.)
- 8 oz. green, white, and/or purple asparagus, trimmed
- 1 T olive oil
Grilled Marinated Salmon

- Sea Salt
- Dried Marjoram
- Dried Basil
