Roasted Red Potatoes

Preheat oven to 400 degrees Place potatoes in a 13x9x2 pan
- +/- 2 1/2 lbs red potatoes, quartered
- 2 tablespoons Canola Oil or Olive Oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/8 teaspoon ground red pepper
- 1/8 teaspoon paprika
Chunky Minestrone

- 1 tablespoon olive oil
- 1-1/2 cups chopped onion
- 1 medium carrot, halved lengthwise and thinly sliced (about 3/4 cup)
- 2 cloves garlic, minced
- 3 cups reduced-sodium chicken broth
- 2 14-1/2-ounce cans low-sodium tomatoes, undrained and cut up
- 3/4 cup water
- 1/2 cup long-grain rice
- 1 teaspoon dried Italian seasoning, crushed
- 4 cups shredded fresh spinach
- 1 15-ounce can reduced-sodium navy beans or white kidney beans, rinsed and drained
- 1 medium zucchini, quartered lengthwise and sliced (about 1-1/2 cups)
- 1/4 teaspoon freshly ground pepper
- Grated Parmesan cheese (optional)

- 6 oz. dried whole wheat or plain fettuccini
- 2 Tbsp. olive oil
- 1-1/4 lbs. frozen large shrimp (20 to 25 per pound), thawed, peeled, and deveined
- 3 cloves garlic, minced
- 1/8 tsp. crushed red pepper flakes
- 3/4 cup dry white wine
- 1-1/2 cups grape tomatoes, halved
- 1/4 cup finely chopped fresh basil

- 1 tablespoon thinly sliced green onion or snipped fresh chives
- 2 teaspoons snipped fresh basil or 1/2 teaspoon dried basil, crushed

- 1/2 teaspoon Dijon-style mustard
- 1/4 teaspoon salt
- Spinach leaves
- 3 Roma tomatoes, sliced
- 2 medium red tomatoes, sliced
- 1 medium yellow tomato, sliced
- 1/2 cup red cherry tomatoes, halved
- 1/2 cup yellow cherry tomatoes, halved
- 1/2 cup crumbled feta, Gorgonzola, or blue cheese (2 ounces)

Walnut Encrusted Pork Roast

- 1 2- to 2-1/2-pound boneless pork top loin roast (single loin)
- 1/3 cup finely chopped walnuts
- 1 tablespoon snipped fresh rosemary
- 1/2 cup merlot or dry red wine
- 1 cup canned lingonberries (about 2/3 of a 14.5-oz. jar) or whole cranberry sauce (about 1/2 of a 16-oz. jar)
- 1 tablespoon lemon juice
- 1 sprig fresh rosemary (about 6 inches)
Paleo Jerusalem Chicken

- 4 skinless boneless chicken breasts
- 1 C organic chicken broth
- 4 cloves garlic, crushed and minced
- 1 yellow onion, chopped
- 1 C white wine
- 1 (8 oz) package sliced mushrooms
- 1 (10 oz) can artichoke hearts, drained (packed in water)
- 1 C coconut milk
- 2 T fresh chopped Italian parsley
- black pepper
- paprika
- sea salt (to taste)

Mexican Chocolate Pots De Creme

- For the pots de crème:
- 7 ounces dark chocolate (70% cacao or higher), finely chopped
- 14 ounce can full-fat coconut milk (I used 365 Everyday Value Coconut Milk from Whole Foods)
- 2 large egg yolks
- 1/8 - 1/4 teaspoon ancho chile powder (depending on how much heat you prefer)
- 1/8 teaspoon kosher salt
- 1 cinnamon stick
- 1 tablespoon vanilla extract
- For the whipped topping:
- 14 ounce can full-fat coconut milk, chilled overnight in the refrigerator
- Coconut sugar, to taste (optional)
- 1 tablespoon ground cinnamon
Panna Cotta with Strawberry Balsamic Compote

- 1 1/4 teaspoons powdered gelatin
- 2 cups homemade vanilla almond milk
- 2 tablespoons grade B maple syrup
- 1/4 teaspoon freshly ground nutmeg
- 1/4 teaspoon sea salt
- For the strawberry balsamic sauce (makes 1 1/3 cups):
- 1/4 cup balsamic vinegar
- 2 cups hulled strawberries, thinly sliced
- 2 tablespoons honey
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
