Baked Sweet Potatoes

Preheat oven to 350 degrees
- 3 tablespoons olive oil
- 4 1/2 large sweet potatoes
- 3 pinches dried oregano
- 3 pinches salt
- 3 pinches ground black pepper
Paleo Pumpkin Pie

- Crust:
- 1 1/2 C almond meal
- 1/4 C melted butter (organic, pasteurized, unsalted free range churned butter)... for added benefits! :-)
- 1 T coconut crystals
- Filling:
- 1 1/2 C organic pumpkin puree
- 3 eggs
- 1 C coconut milk
- 1/2 C agave (or honey)
- 1 T arrowroot powder
- 1 tsp. vanilla
- 2 tsp. cinnamon
- 1/2 tsp. ginger
- 1/2 tsp. nutmeg
- 1/2 tsp. allspice
- 1/2 tsp. sea salt (optional)
Primal Jambalaya

This was really good - made it without the "riced" cauliflower & served over rice
- 2 large chicken breasts, cut into bite-size pieces
- 1 lb andouille sausage, cut into 1/4 inch thick slices
- 1/4 cup olive oil
- 1 cup onion, chopped
- 1 large bell pepper, chopped
- 2 cloves of garlic, minced crushed
- 1 14.5 oz can diced tomatoes, undrained
- 1.5 cups chicken stock
- 1/2 tsp dried leaf thyme
- 1 tbsp parsley (fresh is preferable, but dried will do in a pinch!)
- 1 tsp chili powder
- 1 large head of cauliflower
- 2 cups shelled, deveined and cleaned shrimp
- Salt and pepper to taste
Melt-In-Your-Mouth Pumpkin Cookies

- 2 cups butter, softened
- 2 cups granulated sugar
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg

- 2 teaspoons vanilla
- 1 15 ounce can pumpkin
- 4 cups all-purpose flour
- 1/2 cup butter
- 1/2 cup packed brown sugar
- 1/4 cup milk
- 1 teaspoon vanilla
- 2 3/4 cups powdered sugar
- Ground cinnamon (optional)
Seared Chicken Thighs over Cauliflower Puree

from paleomg.com Really good - Not a huge fan of cauliflower puree so we did mashed potatoes instead
- 1 large head of cauliflower, cut into florets
- 4 tablespoons of fat, divided (coconut oil, ghee, butter, bacon fat, etc.)
- 3 chicken thighs (I used skinless and boneless), pounded to 1/4 inch*
- 3 cups sliced button mushrooms
- 1 small yellow onion, chopped
- 1 teaspoon garlic powder
- salt and pepper, to taste
Drumsticks with Peas and Rice

This was really good & the rice with the mint in it was different & super good
- PEAS & RICE:
- 8 chicken drumsticks
- 1 teaspoon kosher salt or salt
- 3 tablespoons butter
- 1 tablespoon olive or cooking oil
- 2 medium onions, chopped
- 1 shallot, finely chopped
- 2 cloves garlic, minced
- 1 bay leaf
- 3/4 teaspoon dried thyme, crushed
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup dry white wine or chicken broth
- 1 14 ounce can reduced-sodium chicken broth
- Fresh mint leaves
- 1 Peas and Rice, below
- 2 cups fresh or frozen peas
- 1/2 cup sliced green onions
- 3 tablespoons melted butter
- 1/4 cup torn mint leaves
- 1/4 teaspoon salt
- 1/8 teaspoon sugar
- 3 cups cooked rice
- 2 tablespoons reduced-sodium chicken broth

- 1 pound medium shrimp, shelled and deveined
- 1 egg
- 2 tablespoons chopped cilantro leaves
- 1 garlic clove, peeled
- 3/4 cup plain bread crumbs, plus more as needed
- 1 poblano chile, roasted, peeled, stemmed, seeded, and diced
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons vegetable oil
- 1 Hass avocado, halved, pitted, and peeled
- 1/4 cup mayonnaise
- 1 tablespoon fresh lime juice
- 2 medium garlic cloves, peeled
- 1 serrano chile, stemmed, halved and seeded
- 2 tablespoons chopped cilantro leaves
- Sea salt and freshly ground black pepper

This was sooooo yummmyyyy!! We used 1/2 the tarragon because we don't care for the flavor
- 3 Tbsp. olive oil
- 8 oz. new potatoes, cut into 1/2-inch thick slices
- 4 small carrots with tops, trimmed and diagonally cut into 1-inch pieces
- 4 cups mushrooms, halved (12 oz.)
- 1 large onion, cut in thin wedges
- 3 cloves garlic, peeled and sliced
- 1 lb. asparagus, trimmed and cut in 1-1/2-inch pieces
- 2 skinless, boneless chicken thighs, cut into strips
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 3/4 cup reduced-sodium chicken broth
- 1 Tbsp. snipped fresh tarragon
